Onion Tomato Chutney ~ Youtube Videos

I got this simple chutney recipe from youtube videos.....

INGREDIENTS U NEED:
1.Onion-1(Chopped)
2.Tomato-2(Chopped)
3.Red chilli-3-4no
4.Garlic-2cloves
5.Mustard-1/4tbs
6.Urad dhal-1/2tb
7.Salt as needed
8.Oil

METHOD OF PREPARATION:
  • Heat oil in a pan,add  mustard ,urad dhal,garlic,red chilli,onion and saute it untill translucent.
  • Now add tomatos and  fry it untill soft and mushy and switch off the heat and let it cool down.
  • Once its cool down grind it coarsly by adding little water and enough salt and serve.

       Dosa and Idly

Chilli Chicken ~ Jothi

Yet another favorite dish of mine hot chilli chicken which i learnt it from my friend ....

INGREDIENTS U NEED:
1.Boneless Chicken – 1lb(cut into 1-inch pieces)
2.Onions – 2(sliced)
3.Gingergarlic paste – 3tbs
4.Tomato – 1(Chopped)
5.Green chillies – 3(Slicerd)
6.Corn flour – 2 tablespoons
7.Cumin powder-1tbs
8.Corriander powder-1tbs
9.Red color-pinch(Optional)
10.Soya sauce – 3 teaspoons
11.Vinegar – 2 teaspoons
12.Salt as needed
13.Egg-2
14.Oil  for deep fry and 3 tablespoon

METHOD OF PREPARATION:
  • In a bowl add cleaned chicken pieces with corn flour,soya sauce,salt,cumin and corriander powder,gingergarlic paste,vinegar,egg and enough salt ,Mix well and let it marinate for 2-4hrs in a refrigerator.
  • Heat oil in a pan for deep fry ,when the oil is hot add the marinated chicken in small batches and fry untill golden brown for about 5-10mins and drain it in the paper towel and set it aside.
  • Now heat 3tbs of oil in a pan, add sliced onion ,green chilli saute till golden brown and add the remaining sauce from the marinated chicken,sliced tomatos,soy sauce fry it untill cooked.
  • Finally add fried chicken and  saute on low heat for 5mins by stirring continually untill all coated well and switch off the heat and ENJOY!!!! 

GOES WELL WITH:
   Chapathi and Fried rice

Corrianderleaves Pachadi ~ Kiran

Coriander Chutney is a very tasty recipe which can be served with rice or south Indian recipes like Dosa or Idli.Here is the receipe from my friend....

INGREDIENTS U NEED:
1.Corriander leaves-2 cups
2.Green chill-3-5no
3.Fresh grated coconut-1/2cup
4.Tamarind-small lemon size
5.Seasoning-Mustard,Urad dhal,Curry leaves
6.Salt as needed
7.Oil

METHOD OF PREPARATION:
  • Blend corriander leaves,green chilli,coconut,tamarind with enough salt and water into a smooth paste. 
  • Now heat oil in a pan, add seasoning,add the grinded paste and let it cook untill oil comes up and switch off the heat. 
NOTE:
Store tightly covered in refrigerator up to 1 week.



 GOES WELL WITH:
      Fried rice

Spicy Chettinadu Mushroom Masala (Homecookrecipes)

Tried recipe....

INGREDIENTS :
1.Mushroom's - 200gms
2.Red Onion - 1 ( of Medium size, Finely Chopped)
3.Tomatoes - 2 (Chopped)
4.Dry Red Chilli - 2
5.Pepper Powder - 1 tsp
6.Turmeric Powder - a pinch
7.Corriander Powder - 2 tsp
8.Curry Leaves - 5
9.Corriander Leaves Finely Chopped - 2 tsp
10.Mustard - 1/2 tsp
11.Saunf /Sombu - 1/4 tsp
12.Oil - 2 tbsp

Mince the following with your Spice Grinder:
Garlic - 5 pod's
Ginger - 1/2 inch size
Green Chilli - 1

METHOD OF PREPARATION: 
  • Have Garlic, Ginger and Green Chilli in spice your Spice Grinder, mince them and keep aside. do not make them into paste, by adding water. the taste differ's.
  • Wash the Mushroom's and Let them dry. You can also wipe them with a clean cloth.
  • Chop the Onion's and Tomatoe's finely.
  • Heat the Oil in a Kadaai / Pan. Add Mustard, when it pop's, add Saunf , tored Red chilli's and the minced ginger-garlic-green chilli pieces. Saute them, till the raw smell goes off.
  • Add Onion's and fry them. add tomatoe's and fry along with onion's.
  • Add Turmeric Powder, Salt, Corriander powder and Pepper Powder to the onion, Tomato mix and mix them well.
  • Add the Mushroom's, and mix well with the masala. Mushroom's get cooked in 2-3 minutes. add Curry leaves and Leave the pan in slow flame, till the oil seperate's from the masala. Garnish with Corriander Leaves.

Tomato Kuzhambu For Idly and Dosa ~ Shanthy

Tomato Kuzhambu is more used  in Tamilnadu cuisine which is a very simple and easy to cook recipe with less ingredients..It goes very well with especially idly .Try it out.....

INGREDIENTS:
1.Tomato-2big
2.Onion-1(Finely Chopped)
3.Turmeric powder-1/4tbs
4.Seasoning-Mustard,Urad dhal,Channa dhal,Curry leaves,Asafoetida
5.Salt as needed
6.Oil

GRIND:
Coconut-1/4cup
Grind coconut with little water.

METHOD OF PREPARATION:
  • First Boil or Pressure cook the whole tomatoes in water untill smooth and let it cool,now strain the water and mash it coarsly and set it aside(Don't throw the strained water) .
  • Heat oil in a pan, add mustard,urad,channa,curry leaves,Asafoetida and finely chopped onion fry till onion becomes trasparent.
  • Now add the coarsly mashed tomatoes with strained water ,turmeric powder and salt and allow to cook in the medium heat for 15mins.
  • Finally add grinded coconut paste and cook untill  its done or for few 5mins. 

 
GOES WELL WITH:
     Idly and Dosa

Corriander Thokku (Homecook recipes)

Kothamalli thokku is a very good side dish for any breakfast or rice items.I tried this recipe it came out excellent.....

INGREDIENTS U NEED:
1.Corriander Leaves/Kothamalli - 2 bunch(4 cups)
2.Round Red Chilli - 5 (this will be of medium spice)
3.Fenugreek seeds - 1/2 tsp
4.Asafoetida powder - 1/4 tsp
5.Oil - 3 tsp
6.Mustard - 1/4 spoon
7.Tamarind - a small lemon size / or a pinch of tamarind 

METHOD OF PREPARATION:
  • First Wash the Corrainder Leaves and chop it.
  • In a pan, heat a spoon of oil, add the red chilli, fenugreek and roast them till they get croasted. now add asafoetida powder, roasted fenugreek and red chilli's to the mixer grinder.
  • Add the washed corriader leaves, tamarind, salt and 1/4 cup water to the mixer grinder and grind them along with dry red chilli's fenugreek seeds and asafoetida powder very smoothly.
  • Now in the Kadaai or Thick Bottomed pan heat the remaining oil, add mustard, when it cracks, add the grinded paste and let it boil for 5 minutes.
  • After that reduce the flame and stir them till they start sticking to pan. it should go dark green in colour, thats the end point. 

GOES WELL WITH:
       Idly and Fried rice

Mint rice (Samai)

One more tried recipe....

INGREDIENTS U NEED:
1.Basmati rice - 1 cup
2.Potato - 1 (small)
3.Peas - 1/4 cup
4.Mint - 1 (small bunch)
5.Coconut - 2 tbsp
6.Green chilli - 4 to 5
7.Ginger - small piece
8.Turmeric powder - 1/4 tsp
9.Bay leaf - 1
10.Cloves - 2
11.Cardamom - 1
12.Lemon - 1/2
13.Salt - to taste
14.Oil - 3 tbsp

METHOD OF PREPARATION:
  • Cook Rice, Peas and Potato together in cooker, then allow it to cool.
  • Heat Oil in a pan. Add Green chilli, Ginger, Turmeric powder, Mint leaves and Coconut. Fry till the mint leaves are wilted and then grind it.
  • Hat Oil in a pan add Bay leaf, Cloves, Cardamom, ground paste and mix well.
  • Then add cooked Rice(with Potato and Peas) and combine it well.
  • Leave this in low heat for 10 min (if necessary, sprinkle water often).
  • Now add lemon juice and mix well.

Raw Plantain/Vazhakai Roast

Vazhakai roast is a quick recipe and makes a very good yummy side dish for rice and this is one of my all time favorite.Here is how i make it....  

INGREDIENTS U NEED:
1.Vazhakai-3(Peel and dice into medium pieces)
2.Pepper powder or Chilli powder-2tbs
3.Salt as needed
4.Oil little more

METHOD OF PREPARATION:
  • Heat little more oil in a wide shallow pan,toss vazhakai pieces and salt let it cook in a medium flame untill browned,crispy and cooked through.
  • Finally add pepper powder and mix well and turn the heat off. 

 
GOES WELL WITH:
        Sambar Rice

Aval Mixture (VeggiePlatter)

Tried recipe and its a very good tea time snack......

INGREDIENTS U NEED:
1.Poha/Aval Thick-2cups
2.Peanuts-1/2cup
3.Cashewnuts-1/2cup
4.Roasted chickpeas-4tbs
5.Red chilli-5(Slit)
6.Turmeric powder-1/4tbs
7.Seasoning-Mustard seeds,Curry leaves
8.Salt as needeed
9.Oil for deep fry

METHOD OF PREPARATION:
  • Heat more oil in a pan for deep fry, add peanuts and fry till they turn golden brown and remove them and keep it aside and do the same for cashewnuts.
  • Then add poha in small batches in the same hot oil within couple of seconds it floats on the surface ,now remove it and drain it in the paper towel.
  • Now heat 2tbs of oil in a flat pan,add mustard seeds,red chilli,curry leaves and turmeric powder once it starts to pop switch off the heat.
  • In that pan add fried poha,peanuts,cashewnuts,roasted chickpeas and enough salt and mix it well.

Vegetable Kurma ~ MaavooriVanta

Yet another tried recipe from Maavoori Vanta and it came out good and my kids loved it.Here is the recipe....

INGREDIENTS U NEED:
1.Vegetable-2cup(Cubed and Boiled)
(Preferably Beans,Carrot,Cauliflower,Potato and Peas)
2.Onion-1(Chopped)
3.Tomato-1(Chopped)
4.Green chilli-4(Sliced)
5.Onion paste-2tbs
6.Coconut paste-4$tbs
7.Chilli powder-2tbs
8.Garam masla powder-1tbs
9.Turmeric powder-1/4tbs
10.Seasoning-Mustard,Curry leaves
11.Salt as needed
12.Oil

METHOD OF PREPARATION:
  • Heat oil in a pan,splutter mustard seeds,add onion,green chilli,curry leaves one by one and fry.
  • Now add tomatos,onion paste,coconut paste,salt ,chilli powder,turmeric powder,garam masala powder and let it cook untill oil comes up.
  • Then add boiled vegetables and let it cook untill done .
  • Finally add corriander leaves for the better aroma and taste. 

GOES WELL WITH:
    Dosa and Idly

KalaChanna Masala ~ Viji

The recipe for kala channa masala ,i learnt it from my friend and it came out very well.I am sharing the recipe with u all......

INGREDIENTS:
1.Black channa-1cup
2.Onion-1(Chopped)
3.Tomato-1(Chopped)
4.Seasoniong-Mustard,Curry leaves
5.Turmeric powder-1/4tbs
6.Salt as needed
7.Oil

GRIND:
Coconut-4tbs
Green chilli or Red chilli-4-5nos
Garlic-5cloves
Cumin seeds-1tbs
Grind to a smooth paste with little water.

 
METHOD OF PREPARATION:
  • Soak brown channa overnight and the next day cook it with enough water and drain the water completely and keep aside.
  • Heat oil in a pan, add mustard and curry leaves,when it splutters add the onion and saute till transparent.
  • Now add the tomato and cook till soft by adding enough salt.
  • Then add ground masala and mix it well and cook for couple of mins.
  • Now add cooked channa and enough water to get the desired consistency and let it cook untill oil comes up.

Vankaya TomatoPappu (Veggieplatter)

I tried this pappu it came out pretty good......

INGREDIENTS U NEED:
1.Toor dhal-1/2cup
2.Egg plant-3-4(Sliced)
3.Tomato-2(Chopped)
4.Green chilli-2(Finely Chopped)
5.Tamarind pulp- 6tbs
6.Seasoning-Mustard,Cumin,Curry leaves,Asafoetida
7.Turmeric powder-!/4tbs
8.Corriander leaves-To garnish
9.Salt as needed
10.Oil

METHOD OF PREPARATION:
  • First pressure cook the dhal with enough water and turmeric powder untill mushy.
  • Heat oil in a pan,add mustard,cumin,curry leaves and green chiilies and saute it for few seconds .
  • Then add sliced brinjal and let it cook for 2-3mins and tomatos as well.Mix them well and continue to cook till the eggplant soften.
  • Now add the mashed dhal along with salt,tamarind paste and asafoetida let it cook for 5mins in low flame.
  • Finally add corriander leaves and turn off the stove. 

 GOES WELL WITH:
       Plain rice

Tindora/Dondakai Fry

Tindora fry is an easy to make side dish which goes along very well with sambar and rasam rice. This recipe is very simple and there are various variations to cook this vegetable but this is how i like it.Lets go to the recipe.....

INGREDIENTS U NEED:
1.Tindora-1/2lb(Slice them into thin rounds)
2.Pepper powder -1tbs
3.Salt as needed
4.Oil-5tbs

METHOD OF PREPARATION:
  • Heat oil in a pan,add dondakai pieces and saute them in a medium flame untill it turns light brown.
  • At this stage add salt and pepper powder and combine well and let it cook for 5mins and turn off the heat.  

GOES WELL WITH:
     Plain rice and sambar rice

Berry Punch ~ Shanthy

Berry punch is a very refeshing drink ,easy and simple to make and it is good start up drink during kids birthday parties,Get together,Picnic etc.Here is the direction to make.....

INGREDIENTS U NEED:
1.BerkleyJensen Cranberry Rasberry Juice-2Quarts
2.Canada dry Soda-1Quart
3.Ice cubes as needed
4.Rainbow sherbet or Icecream as needed(Optional)

UTENSIL:
Big deep Punch bowl

METHOD OF PREPARATION:
  • In a large punch bowl mix cranberry, rasberry juice and canada dry soda.Then combine together.
  • Now add couple of tray of ice cubes and give it a stir.
  • Just before serving, add scoops of the ice cream or sherbet and serve.

Amarnathleaves Poriyal with Peanuts

Amarnath leaves poriyal is a simple,healthy, low-calorie, low-fat, high protein, nutritional dish that is used often in my kitchen as side dish for sambar rice.Here is how i cook it....

INGREDIENTS U NEED:
1.Amarnath leaves-5cups(Chopped)
2.Onion-1(Sliced) 
3.Red chilli-2(Slit)
4.Garlic-3cloves(Crushed)
5.Fried Peanuts-1/2cup(Coarsly grinded)
6.Seasoning-Mustard,Cumin,Urad dhal
7.Salt as needed
8.Oil

METHOD OF PREPARATION:
  • First wash and chop amarnath leaves and keep it aside.
  • Heat oil in a pan,add mustard seeds,urad dhal,cumin and fry them,When they start to splutter add splited red chillies, crushed garlic ,chopped onion pieces and  Let them fry until light brown color. 
  • Now add chopped amarnath leaves, Mix well and let it cook in the medium flame untill all the water evaporates. 
  • Finally When it's almost done, add salt and coarsly grinded fried peanuts powder and stir well untill it becomes dry.

GOES WELL WITH:
      Sambar and Rasam rice

Bean Soup with Indian Twist

 Bean soup is a very healthy,delicious and spicy soup with indian twist.It is my own version of soup which is very quick and easy to cook.Here is a great tasting bean soup....

INGREDIENTS U NEED:
1.Dry 15 bean soup mix-2cup or Pinto beans
2.Red onion-1(Diced)
3.Canned Plum tomato-1can
4.Zucchini-1(Diced)
5.Celery-1stalk(Diced)
6.Red chilli sauce-3tbs
7.Red chilli flakes-1tbs
8.Pepper powder-1tbs
9.Lime Juice-3tbs
10.Dry oregano-1tbs
11.Salt as needed
12.Extra virgin olive oil

METHOD OF PREPARATION:
  • Soak the beans separately overnight and drain.
  • In a large soup pot, place the beans, the onion, zucchini, tomatoes ,celery and olive oil, and cover by 1-inch with cool water. Cover the pot and bring to a boil. 
  • Now Lower the heat and simmer until the beans are tender about 1 hour to 1 hour and 30 minutes. 
  • At this stage Add the sauce, chilli flakes,oregano,pepper powder,salt and turn the heat to high and mix it altogether well and switch off . 
  • Divide the soup among 4 bowls and top each bowl of minestrone with a lime juice and serve hot.

    Tomato Biryani(Myerecipecorner)

    One more tried recipe....

    INGREDIENTS U NEED:
    1.Basmati rice-2cups
    2.Onion-2(Sliced)
    3.Tomato-3(Chopped)
    4.Mint and corriander leaves-1cup(Chopped)
    5.Gingergarlic paste-1tbs
    6.Chilli powder-3tbs
    7.Turmeric powder-1tbs
    8.Seasoning-Cinnamon,Cloves,Cardamom
    9.Salt as needed
    10.Oil

    METHOD OF PREPARATION:
    • Heat oil in a pressure pan, add the cinnamon, cloves and cardamom. When the aroma rises add the onions and fry till pink in color, now add the ginger and garlic paste and fry till the raw smell leaves.
    • Then add the peas, chopped tomatoes, chilly powder, turmeric powder and salt. Cook till the tomatoes are mashed and oil separates.
    •  Now add the mint and coriander leaves, fry for a minute. Now add the required water for the rice and check the seasoning. Add the washed and drained rice and cook until the rice becomes tender.


      GOES WELL WITH:
           Raita

      Urad dhal Chutney(Samai)

      Tried recipe..... 

      INGREDIENTS U NEED:
      1.Urad dal - 1/4 cup
      2.Red chili - 4 to 5
      3.Garlic - 2 cloves
      4.Tamarind - small gooseberry size
      5.Coconut(grated)  - 4 tspn
      6.Curry leaves - a sprig
      7.Hing - 3 to 4 pinches
      8.Salt - to taste
      9.Oil - 2 tspn

      For Seasoning:
      Mustard seeds and Urad dal - 1/2 tspn
      Onion - 1 or 2 tspn
      Curry leaves - a sprig
        METHOD OF PREPARATION:
        • Heat a tspn of Oil in a pan. Add Urad dal, Red chilies and Garlic, fry till dal turns golden brown.
        • Then add grated Coconut, Tamarind, Hing and Curry leaves. Fry for 1 or 2 minutes and remove from heat.
        • Now grind these fried ingredients with Salt and make a coarse chutney.Add water while grinding.
        • Heat a tspn of Oil in a pan, add Mustard seeds and Urad dal. Once the seeds starts spluttering add Onion and Curry leaves, saute till Onion turns golden brown. Then pour this mix to the chutney.

        Mutton Kuzhambu

        Mutton is nothing but a goat meat and this curry is very aromatic and spicy dish. Here i like to share the recipe for mutton curry......  

        INGREDIENTS U NEED:
        1.Mutton-1lb
        2.Onion-1(Chopped)
        3.Tomato-1(Chopped)
        4.Gingergarlic paste-3tbs
        5.Chilli powder-2tbs
        6.Corriander powder-1tbs
        7.Turmeric powder-1/4tbs
        8.Garam masala powder-1/4tbs
        9.Corriander leaves-To garnish
        10.Seasoning-Cinnamon 1,Cloves 4
        11.Salt as needed
        12.Oil

        METHOD OF PREPARATION:
        • First Wash and cut the meat into medium size pieces.
        • Heat oil in a pan,add seasoning,now add the onions ,when they to turn light brown ,add ginger garlic paste and stir well.
        • Now add the meat pieces along with turmeric powder and salt and saute it for 5-10mins,then add  tomato and mix well .
        • At this stage add chilli and corriander powder with little water ,let it cook for about 30mins or untill the meat is cooked well . 
        • Finally add the garam masala powder and corriander leaves and switch off the flame.

        GOES WELL WITH:
             White rice

        Thotakura Pappu(Sailus food)

        Tried recipe from sailus food...........

        INGREDIENTS U NEED:
        3/4 cup tur dal (kandi pappu) pressure cook until soft and mash (shouldn’t be watery)
        2 cups tightly packed thotakura leaves (not the stalks)
        1 big onion finely chopped
        4-5 green chillis slit length wise
        1/4 tsp turmeric pwd
        lemon sized tamarind (soak in a cup of warm water and extract)
        For tempering/poppu/tadka:
        1 tbsp oil
        1/2 tsp mustard seeds
        1/2 tsp cumin seeds
        1/2 tsp split black gram dal
        1/2 tsp channa dal
        4-5 dried red chillis (tear into pieces)
        5-6 garlic flakes crushed
        10-12 curry leaves

         
        METHOD OF PREPARATION:
        • Heat oil in a heavy bottomed vessel, add mustard seeds, let them pop, add the cumin seeds, split gram dal and channa dal and let them brown. Next add the garlic, red chillis, curry leaves, chopped onions and green chillis and sauté till onions turn slightly pink.
        • Add the thotakura and stir fry for 3-4 mts. Add the turmeric pwd and salt and combine. Cover with lid and cook till the greens cook (approx 7-8 mts). Using the back of the ladle, mash the contents slightly.
        • Add the cooked and mashed dal to the onion-thotakura mixture. Cook for another 4-5 mts on medium heat.
        • Add the tamarind extract and combine well. Cook for another 9-10 mts or till the rawness of tamarind disappears. It should not be a watery dal but have more of a thick consistency dal.
        • Serve with white rice or hot rotis.
