Butter Capsicum Paneer Curry (Homecookrecipes)

This is yet another tried dish and the kids loved it so much...

INGREDIENTS U NEED:
1. Paneer Cubes -1 cup
2.Capsicum- 1/2
3.Onions-2
4.Tomatoes-3
5.Corriander Leaves- 1 cup
6.Chilly powder
7.Butter- 1/4 cup
8.Salt to taste
 
METHOD OF PREPARATION:Cut the paneer into cubes and roast it in a Tava, without oil. roast it on both the sides. keep it aside.
  • Now have 4 spoons of oil and fry the onions and tomatoes and corriander leaves. fry it well. let them cool and grind it into a paste.
  • Now have oil in kadai and fry the capsicum cutted in cube shapes.
  • After frying it, add fried paneer,the grinded paste, chilly powder, Turmeric powder a pinch and salt. Mix well and let them boil for 3 minutes.
  • Now add the butter and close it with a lid and let it done for 5 minutes. now it is ready to serve.

GOES WELL WITH:
      Naan or Chapathi

Crispy Potato Roast ~ Ramya

Potato roast is a simple side dish tastes very well with curd rice.Got this recipe from one of my Friend.Now coming to the recipe....

INGREDIENTS U NEED:
1.Potato -3Medium (Cut into small cubes)
2.Turmeric powder - 1/2tbs
3.Chili powder - 2tbs
4.Corriander powder - 1tbs
5.Besan flour - 3tbs
6.Seasoning - Mustard,Cumin,Channa dhal,Urad dhal
7.Salt to taste
8.Oil little more

METHOD OF PREPARATION:
  • Heat oil in a pan and add the seasoning one after another,when they pop,add the chopped potatos and saute untill lightly browned.
  • Now add the chilli powder,corriander powder,turmeric powder and salt fry for a min and mix well and cook untill the potatoes are well cooked and soft.
  • Finally add the besan flour and make sure you mix every 2-3 mins to distribute the heat(low flame) and avoid the potatoes from burning from the bottom and fry untill brown and crispy.

      Curd rice and Kara Kuzhambu

Bittergourd/Pavakkai Thokku

Bittergourd or Pavakkai thokku is quick and easy side dish and goes well with rice.Try this spicy thokku and u will love it......  

INGREDIENTS U NEED:
1.Bittergourd- 5medium size(Cut into thin slices and remove the seeds)
2.Onion-2(Finely chopped)
3.Tomato-1(Finely chopped)
4.Garlic-10pods(Remove the skin)
5.Tamarind-1lemon size
6.Tamarind pulp-1Cup
7.Chilli powder-3tbs
8.Turmeric powder
9.Jaggery-5tbs
10.Salt to taste
11.Seasoning-Mustard,Curry leaves
12.Oil-8tbs

METHOD OF PREPARATION:
  • First boil the chopped pavakkai with tamarind with little water until cooked and strain the water and remove the tamarind and keep it aside.
  • Now heat little more oil in a pan,add mustard,curry leaves,garlic and onion saute it untill brown.Then add tomato and fry it well and add cooked Pavakai,chilli powder,salt,turmeric powder and tamarind pulp water and cook it untill thick.
  • Finally add jaggery and mix it well and let it cook for 5-10 mins in the low flame or untill the oil comes up and now its ready to serve.

 GOES WELL WITH:
        Plain rice

Kathrikai Kothsu

Kathrikai kothsu making it in a simple version with less ingredients is a very good side dish for any kind of Biryani.Try it out ...

INGREDIENTS U NEED:
1.Brinjal small - 6nos(Slit it into four,the base should be intact)
2.Tamarind-Small lemon size (soaked for 5 minutes, squeezed and juice collected)3.Chili powder-3tbs
4.Corriander powder-2tbs
5.Turmeric powder-1/2tbs
6.Onion-1(Chopped)
7.Seasoning-Mustard,Urad,Curry leaves,Asafoetida
8.Fried sesame and Mustard powder-1/4tbs
9.Salt to taste
10.Oil

METHOD OF PREPARATION:
  • First in a medium bowl,add chili powder,coriander powder,turmeric powder and salt and mix it together without adding water and apply this mixture in between the cut brinjal.
  • Now In a pan add oil,mustard,urad dhal,once it starts spluttering add onion, asafoetida and the stuffed brinjal and close the lid let it cook for 10mins in the medium flame.
  • Then add little thick tamarind pulp water  and let it cook for 5-10mins or untill oil comes up on top.
  • Finally add fried sesame seeds powder and.methi powder and switch off the gas immediately.
  • Garnish with chopped coriander leaves.

GOES WELL WITH:
      White rice and Biryani

Potato Podimas(My spicyhut)

Yet another tried recipe turned out really very good side dish for my fried rice.....

INGREDIENTS U NEED:
1.Potato-2
2.Green chili-2(Optional)
3.Garlic cloves-4(Crushed)
4.Red chilli-5-6
5.Seasoning-Mustard,Urad dhal,Channa dhal,Curry leaves,Cumin
6.Turmeric powder-1/4tbs
7.Salt as needed
8.Oil

METHOD OF PREPARATION:
  • First peel off the potato ,wash it and cut it into very thin stlices.
  • Now Heat oil in a pan,add crushed garlic and saute it, and add broken red chilli,cumin, mustard,urad,channa dhal and fry untill it pops up and keep it in the medium flame.
  • Then add turmeric powder,salt and sliced potato and keep frying it untill it becomes soft and well cooked.

GOES WELL WITH:
      Fried rice and Curd rice

Tomato Capsicum Thokku

Tomato capsicum thokku is a excellent sidedish for breakfast like dosa,idli as well as chapathi .This thokku can be preapred in few mins.Here is how i make it..... 

INGREDIENTS U NEED:
1.Tomato-3(Chopped)
2.Onion-1(Sliced)
3.Capsicum-1(Chopped)
4.Green chilli-4(Sliced)
5.Turmeric powder-1/4tbs
6.Seasoning-Mustard,Cumin,Urad,Channa dhal,Curry leaves
7.Corriander leaves to garnish
8.Salt as needed
9.Oil

METHOD OF PREPARATION:
  • Heat oil in a pan add the mustard,cumin seeds,urad,channa and curry leaves and let them splutters, now add the onions and green pepper fry untill it becomes transculent.
  • Then add the tomatoes pieces,turmeric powder and salt and stir until they turns mushy, keep them in simmer, cook until the oil gets separated.
  • Finally add the coriander leaves and put off the stove.

      Idli,Dosa and Chapathi

Spinach Egg Fry

Egg fry with spinach is a good combination and it is a very simple dish to cook and goes very well with sambar and rasam rice which i make it so often.Try it....

INGREDIENTS U NEED:
1.Egg-3
2.Spinach-1cup(Chopped)
3.Onion-1(Sliced)
4.Garlic-4cloves(Crushed)
5.Green chilli-3(Slit)
6.Chilli powder-1tbs
7.Turmeric powder-1/4tbs
8.Curry leaves -5no
9.Corriander leaves to garnish
10.Salt as needed
11.Oil

METHOD OF PREPARATION:
  • Heat oil in a pan, add green chilli and onion saute it untill the onions are translucent.
  • Now add crushed garlic fry it and add chopped spinach and cook it for few mins.
  • Then add chilli powder,turmeric powder,salt,curry leaves and let it cook for few more mins and add little water cook untill the spinach is well done. 
  • At this stage crack the egg in the cooked spinach and mix it well together and fry untill the egg is well cooked and dry. 
GOES WELL WITH:
    Sambar and Rasam rice

Spicy Chettinadu Mushroom Masala (Homecookrecipes)

Tried recipe....

INGREDIENTS :
1.Mushroom's - 200gms
2.Red Onion - 1 ( of Medium size, Finely Chopped)
3.Tomatoes - 2 (Chopped)
4.Dry Red Chilli - 2
5.Pepper Powder - 1 tsp
6.Turmeric Powder - a pinch
7.Corriander Powder - 2 tsp
8.Curry Leaves - 5
9.Corriander Leaves Finely Chopped - 2 tsp
10.Mustard - 1/2 tsp
11.Saunf /Sombu - 1/4 tsp
12.Oil - 2 tbsp

Mince the following with your Spice Grinder:
Garlic - 5 pod's
Ginger - 1/2 inch size
Green Chilli - 1

METHOD OF PREPARATION: 
  • Have Garlic, Ginger and Green Chilli in spice your Spice Grinder, mince them and keep aside. do not make them into paste, by adding water. the taste differ's.
  • Wash the Mushroom's and Let them dry. You can also wipe them with a clean cloth.
  • Chop the Onion's and Tomatoe's finely.
  • Heat the Oil in a Kadaai / Pan. Add Mustard, when it pop's, add Saunf , tored Red chilli's and the minced ginger-garlic-green chilli pieces. Saute them, till the raw smell goes off.
  • Add Onion's and fry them. add tomatoe's and fry along with onion's.
  • Add Turmeric Powder, Salt, Corriander powder and Pepper Powder to the onion, Tomato mix and mix them well.
  • Add the Mushroom's, and mix well with the masala. Mushroom's get cooked in 2-3 minutes. add Curry leaves and Leave the pan in slow flame, till the oil seperate's from the masala. Garnish with Corriander Leaves.

       Chapathi

Tomato Onion Bhurji

Tomato onion bhurji is a quick,easy and delicious side dish for chapathi.Lets go to the recipe....

INGREDIENTS U NEED:
1.Tomato -3(Chopped )
2.Onion -2(Chopped lengthwise)
3.Green chilli-3(Slit)
4.Turmeric powder-1/4tbs
5.Seasoning-Mustard,Cumin,Curry leaves,Urad dhal
6.Corriander leaves for garnish
7.Salt as needed
8.Oil

METHOD OF PREPARATION:
  • Heat oil in a pan,once the oil is hot ,add seasoning one by one let it splutter ,then add onion and geen chilli and saute it untill the onion becomes tanslucent.
  • Then add chopped tomatoes, turmeric powder and salt and let it cook untill the tomatoes becomes soft.
  • Finally  add chopped corriander leaves and mix well and switch off the flame.

GOES WELL WITH:
     Chapathi

Onion with Pepper Fry for Chapathi

Onion with pepper powder fry is a very good combination for chapathi .It is very easy to make and very tasty to eat . Try it and see......

INGREDIENTS U NEED:
1.Onion-3(Finely chopped)
2.Pepper powder-2tbs
3.Salt as needed
4.Oil

METHOD OF PREPARATION:
  • In a deep pan add 5tbs of oil,add chopped onion fry it untill the onion turns translucent.
  • Then add salt fry it untill the onion turns light brown in color and dry. 
  • Finally add pepper powder and fry it for few mins and switch off the flame.

     Chapathi

1.Capsicum-2(Thinly Sliced)
2.Onion-1(Sliced)
3.Tomato-1(Chopped)
4.Chilli powder-1tbs
5.Corriander powder-1/2tbs

7.Seasoning-Mustard,Cumin,Curry leaves
8.Salt as needed
9.Oil

METHOD OF PREPARATION:
  • Heat oil in a pan,add seasoning let it splutter,then add onion saute it for few mins.
  • Now Add tomatoes let it fry for 2mins,add capsicum,turmeric powder,chilli powder,corriander powder and salt and cover it cook it for 10-15mins.
  • Finally garnish with corriander leaves and serve it.

Onion Raita

Raitas are made with yogurt which offer a cooling contrast to spicy Indian dishes, are simple to prepare.Stir the yogurt until creamy, then flavor it with some combination of raw or cooked vegetables, herbs, fruit and spices but this is the simple version. Add salt just before serving to prevent the ingredients from getting watery. Here is how i make it...

INGREDIENTS U NEED:
1.Plain Yoghurt- 2 cup
2.Onion- 2( Chopped lengthwise)
3.Tomatoes-1 optional (Chopped)
4.Green chilies- 1 (finely chopped)
5.Corriander-1/2bunch(Finely chopped)
6.Salt as needed
7.Sugar-Pinch

METHOD OF PREPARATION:
  • Whisk the yoghurt with little water. Add onion, tomato and green chili . Season with salt and sugar.
  • Garnish with chopped corriander leaves.



GOES WELL WITH:
      Biryani,Pulav and Chapathi

Omellette Curry

Omellette curry is a yummy sidedish for fried rice.First time i tried it and i fall in love with it.It is very simple and quick receipe so try it out.... 

INGREDIENTS U NEED:
1.Egg-4
2.Onion-1(Chopped Finely)
3.Tomato-1(Chopped Finely)
4.Green chilli-3(Slit)
5.Gingergarlic paste-2Tbsp
6.Turmeric powder-Pinch
7.Garam masala-Cinnamon,Cloves
8.Seasoning-Mustard,cumin
9.Salt as needed
10.Oil

UTENSIL:
Dosa maker
Small deep pan

METHOD OF PREPARATION:
  • First In a dosa pan add a spoon of oil crack one egg and cook it both sides untill its done and do the same with rest of other eggs and keep it aside.
  • Now Heat the oil in a frying pan, add mustard, cumin seeds when its begins to splutter, add the whole garam masala.
  • Add the onion  fry it for few mins and then ginger garlic paste and sauté for two minutes.
  • Add the tomato,salt,turmeric powder and sauté everything for two minutes. Now add the cooked omelette's and mix it well together so that all the masala will coat nicely and switch off the flame.
  • Finally Garnish with some corriander leaves .



GOES WELL WITH:
     Fried rice and roti

Simple Potato Curry For Chapathi

Potato Curry that is usually served with chapathi or puri is a simple recipe and almost like a dry saute and curry consistency.Try it out...

INGREDIENTS U NEED:
1.Potato-4
2.Onion-1(Thinly sliced)
3.Green chilli-2(Slit)
4.Turmeric powder-Pinch
5.Seasoning-Mustard,urad dhal,chana dhal,curry leaves
6.Corriander leaves-To garnish
7.Salt as needed
8.Oil

METHOD OF PREPARATION:
  • First boil the potato and peel the skin and crumble with hand
  • Heat oil in a cooking vessel, add mustard seeds and let it splutter. Add urad dal and channa dal fry till they turn red. Add fresh curry leaves and  green chillis and saute for a few secs.
  • Add the sliced onions and saute on medium heat for 4-5 mts or till the onions turn transparent. Add the turmeric pwd and combine. Add the crumbled boiled potatoes and adjust salt. Place lid and cook for 3 mts.
  • Add a cup of water to the potatoes and increase flame, cook for 2 mts. Reduce flame and place lid and cook for 4-5 mts.
  • Remove lid and give a good stir until the curry slightly thickens and Garnish with coriander leaves .

GOES WELL WITH:
      Chapathi and Puri

Cauliflower Fry ~ Latha Aunty

It is a simple cauliflower fry made with the basic indian spices.A combination of Indian spices transforms this simple vegetable dish into a delight for the senses.This dish is very easy to make and it is very good side dish for any kind of rice or dosa which i got it  from my bangalore aunt.Here goes the receipe..

INGREDIENTS U NEED:
1.Cauliflower-1(cut the florets into medium pieces)
2.Onion-1(chopped)
3.Tomato-1(chopped)
4.Turmeric powder-pinch
5.Chilli powder-1tbs
6.Ginger garlic-2tbs crushed
7.Seasoning-Mustard,Cinnamon,Cloves,Curry leaves
8.Salt-as needed
9.Oil

UTENSIL:
Wide pan

METHOD OF PREPARATION:
  • First soak the cauliflower in the hot water with salt for 10-15mins and strain the water thoroughly
  • Heat oil in a pan,add mustard,curry leaves,cinnamon,cloves let it splutter and then add crushed ginger and garlic,add onion fry it untill brown 
  • Then add  tomato,turmeric powder and salt cook it for few mins
  • Finally add cauliflower and chilli powder and mix it well and cook for 5-10mins or untill the vegetable is tender and garnish with corriander leaves
GOES WELL WITH:
   Plain rice

Potato with Tomato ~ Chythanya

Potatoes are cooked in a spiced gravy of onions and tomatoes and makes a great curry with rotis and chapatis. I also make this sometimes as an accompaniment to a subtly spiced flavored rice or steamed white rice.This dish is very simple ,comforting and flavorfulas side dish .I learnt this receipe from my friend chythanya.Here is the receipe......

INGREDIENTS U NEED:
1.Potato - 2(cut into medium pices)
2.Onion - 1(chopped)
3.Gingergarlic paste - 2tbs
4.Seasoning-(Cinnamon 1,Cloves 3,Cardomom 2)
5.Tomatoes - 1(chopped)
6.Curd - 1/4cup
7.Chilly powder-1/2tbs
8.Corriander powder-1/2tbs
9.Coconut powder-2tbs
10.Oil
11.Salt-as per taste

UTENSIL:
Deep bottomed pan

METHOD OF PREPARATION:
  • Heat oil in a pan , add cinnamon,cloves,cardomom, onions and saute till the onions turn light brown
  • Then add gingergarlic paste and potato let it cook for 5-10mins
  • Add salt,chilli powder,corriander powder,coconut powder,tomatoes,curd and little water and bring to a boil and let it simmer on medium heat till you get the desired curry consistency and potatoes are cooked.
  • Finally add chopped coriander leaves and serve hot.

GOES WELL WITH:
      Chappathi  

Green Pepper Masala ~ Megha

Bell peppers contains high dose of antioxidants.This is another one of those foods which has more ingredients to use and takes lot of effort to make but its worth it and that is the truth.Serve this dish with hot Chapatis or plain boiled rice which i learned  from my friend mega.Hope u like it as much as i do...

INGREDIENTS:
1.Green pepper - 2
2.Chilly powder-1tbs
3.Turmeric powder-pinch
4.Salt-as needed
5.Corriander leaves-1/4bunch
6.Curry leaves-2string
7.Tamarind-little
8.Onions - 2(finely chopped)
9.Oil
10.Seasoning-1tbs(mustard,cumin)curry leaves

GRIND:
Fry the below items without oil for few mins
Corriander seeds-1/4tbs
Cumin-1/2tbs
Cloves-3
Cinnaman-1inch stick
Cardamom-2
Poppy seeds-1/2tbs
Dry coconut-1tbs
Peanuts -2tbs
and grind with chilli powder,salt,turmeric powder,corriander leaves,curry leaves and tamarind untill smooth paste .

UTENSIL:
Deep wide pan

METHOD OF PREPARATION:
  • First boil the pepper with a pinch of salt in a enough water and cut into medium pieces 
  • Heat oil in a pan ,add mustard seeds,cumin seeds, and curry leaves and let it splutter
  • Then add onions and fry it till translucent and add ground masala cook untill nice aroma comes out
  • Finally add boiled and chopped green pepper cook it for 5mins and garnish with corriander leaves.
GOES WELL WITH:
    Plain rice and Chappathi
