Red Pepper Chutney (Menutoday)

Tried recipe.....

INGREDIENTS U NEED:
1.Red Capsicum-1
2.Fresh Red chillies 3 to 4 according to taste
3.Jaggery-Little
4.Salt to taste
5.Tamarind - Small lime size
6.Oil
7.Hing
8.Seasoning-Mustard,Urad dhal,Curry leaves

METHOD OF PREPARATION: 
  • Chop the Capsicum and chillies and keep aside.
  • Heat 2 tsp of Oil in a tawa and fry this chilli pieces for a while.
  • Cool and Grind along with Jaggery,Tamarind,Salt and Hing.
  • Heat one tsp of oil and temper the Mustard seeds,Urad dhal and Curry leaves.

GOES WELL WITH:
      Dosa and Idly

Mint Corriander Chutney ~ MIL version

Mint with Coriander chutney is a very healthy side dish.This basic chutney is perfect for dipping sauce or dishes like biryani etc. Lets come to the recipe...

INGREDIENTS U NEED:
1.Mint leaves-1bunch(Cleaned and remove the leaves)
2.Coriander leaves-1bunch(Cleaned and remove the leaves)
3.Green chili-4-5no
4.Garlic-4cloves(Remove the skin)
5.Coriander seeds -2tbs
6.Cumin-3tbs
7.Tamarind pulp-1/2cup
8.Salt as needed
9.Oil

METHOD OF PREPARATION:
  • In a medium hot pan fry cumin,coriander seeds for about 2-3mins and keep is aside.
  • In the same pan add 1tbs of oil,garlic,green chili and fry it for few mins and set it aside.
  • Now in the same pan ,add 1tbs of oil,add washed mint and coriander leaves and fry it 3-4mins and  keep it aside.
  • Then grind all the fried ingredients together with enough salt ,tamarind pulp( without adding water) into smooth paste in a blender.
  • Finally do the seasoning with mustard and add it to the grinded chutney and serve.
Note:
This chutney stays good for atleast a month if stored in the Fridge.

Onion Tomato Chutney ~ Youtube Videos

I got this simple chutney recipe from youtube videos.....

INGREDIENTS U NEED:
1.Onion-1(Chopped)
2.Tomato-2(Chopped)
3.Red chilli-3-4no
4.Garlic-2cloves
5.Mustard-1/4tbs
6.Urad dhal-1/2tb
7.Salt as needed
8.Oil

METHOD OF PREPARATION:
  • Heat oil in a pan,add  mustard ,urad dhal,garlic,red chilli,onion and saute it untill translucent.
  • Now add tomatos and  fry it untill soft and mushy and switch off the heat and let it cool down.
  • Once its cool down grind it coarsly by adding little water and enough salt and serve.

Urad dhal Chutney(Samai)

Tried recipe..... 

INGREDIENTS U NEED:
1.Urad dal - 1/4 cup
2.Red chili - 4 to 5
3.Garlic - 2 cloves
4.Tamarind - small gooseberry size
5.Coconut(grated)  - 4 tspn
6.Curry leaves - a sprig
7.Hing - 3 to 4 pinches
8.Salt - to taste
9.Oil - 2 tspn

For Seasoning:
Mustard seeds and Urad dal - 1/2 tspn
Onion - 1 or 2 tspn
Curry leaves - a sprig
    METHOD OF PREPARATION:
    • Heat a tspn of Oil in a pan. Add Urad dal, Red chilies and Garlic, fry till dal turns golden brown.
    • Then add grated Coconut, Tamarind, Hing and Curry leaves. Fry for 1 or 2 minutes and remove from heat.
    • Now grind these fried ingredients with Salt and make a coarse chutney.Add water while grinding.
    • Heat a tspn of Oil in a pan, add Mustard seeds and Urad dal. Once the seeds starts spluttering add Onion and Curry leaves, saute till Onion turns golden brown. Then pour this mix to the chutney.

    Mint Pachadi

     Mint pachadi tastes so good with rice or any fried rice.See how i make it....

    INGREDIENTS U NEED:
    1.Mint leaves-2Cups
    2.Green chilli-4-5
    3.Garlic-3cloves
    4.Ginger-1'
    5.Coconut-1/2Cup
    6.Seasoning-Mustard,Cumin,Curry Leaves 
    7.Salt as needed
    8.Oil

    METHOD OF PREPARATION:
    • Heat oil in a pan ,add garlic,ginger and green chilli saute it for few mins.
    • Then add mint leaves let it cook untill it shrinks and finally add coconut fry it for few mins and switch off the flame and let it cool down.
    • Now grind it untill smooth with enough salt and little water.
    • Finally for seasoning  in a pan add little oil , mustard,cumin and curry leaves let it splutter and pour this in the chutney and mix it well and serve it.

    Corriander Pacchadi

    Corriander pachadi is so versatile and goes with most foods .There are numerous ways of preparing chutneys and each home has its own version of making it.Here is how my MIL makes it....

    INGREDIENTS U NEED:
    1.Corriander leaves-2Cup
    2.Green chilli-3-4
    3.Garlic--4cloves
    4.Ginger-1'
    5.Coconut-1/2Cup
    6.Seasoning-Mustard,Cumin,Curry Leaves 
    7.Salt as needed
    8.Oil

    METHOD OF PREPARATION:
    • Heat oil in a pan ,add garlic,ginger and green chilli saute it for few mins.
    • Then add corriander leaves let it cook untill it shrinks and finally add coconut fry it for few mins and switch off the flame and let it cool down.
    • Now grind it untill smooth with enough salt and little water.
    • Finally for seasoning  in a pan add little oil , mustard,cumin and curry leaves let it splutter and pour this in the chutney and mix it well and serve it.

    Moong dhal Chutney

    Moong dhal chutney is another kind which my MIL  makes it.This chutney goes well with dosa and idly and even rice.For idly and dosa add more water it has to be little thinner and for rice it has to be thick.Here is how i make it...  

    INGREDIENTS U NEED:
    1.Moong dhal-1/2cup
    2.Garlic-2cloves
    3.Red chilli-1
    4.Pepper-1/4tbs
    5.Salt as needed
    6.Curry leaves-1string
    7.Coconut-1/2cup(Optional)
    8.Seasoning-Mustard,Cumin
    9.Oil

    METHOD OF PREPARATION: 
    • First roast the moong dhal for few mins untill brown.
    • Then add garlic,red chilli,curry leaves,pepper and saute it for 1min and switch off the stove and let it cool down.
    • Then grind it untill smooth with enough salt and water.
    • Finally  heat oil in a pan ,add seasoning once it pops, pour it into the chutney and serve.

    Peanut Chutney

     This is how my MIL makes peanut chutney  in our village......

    INGREDIENTS U NEED:
    1.Peanuts-1cup
    2.Red chilli-3 adjust ur taste
    3.Onion -1
    4.Garlic-2cloves
    5.Curry leaves -1string
    6.Tamarind-little
    7.Salt to taste
    8.Seasoning -mustard,cumin,urad dhal,curry leaves
    9.Oil

    METHOD OF PREPARATION:
    • Roast the peanuts in a pan for few minutes. Cool it and remove the skin.
    • Combine the peanuts,red chilli,onion,tamarind,garlic,curry leaves and grind it in a blender by adding enough water untill smooth.
    • Heat oil in a pan. Add the mustard seeds,cumin,urad dal and curry leaves. Once the mustard crackles, remove from heat and pour it to the chutney.

    Urad dhal Chutney(Easy2cook)

    I tried this receipe it tastes good...

    INGREDIENTS U NEED:
    1.Urat dal - 1/2 cup
    2.Coconut pieces - 3
    3.Asafoetida - 1 tsp
    4.Red Chillies - 3
    5.Curry leaves and Coriander leaves - few
    6.Salt to taste
    7.Seasoning- Mustard,Urat dal,Red Chillies
    8.Oil

    METHOD OF PREPARATION:
    • Roast the above said ingredients with a spoon of oil till the flavour rules out and allow it to cool .
    • Then grind them with little water and salt .
    • Temper it with mustard , urat dal , red chillies . 

    GOES WELL WITH:
         Adai or Dosa

    Tomato with Mint Chutney

    This chutney is a simple, quick and satisfying side dish that went down really well with Idli and dosa, our morning breakfast.Yummy chutney try it......

    INGREDIENTS U NEED:
    1.Tomatoes – 5(Chopped)
    2.Onion-2(Chopped)
    3.Mint leaves-1bunch(Chopped)
    4.Curry leaves-2strings
    5.Garlic-3cloves
    6.Red chilli or Green chilli-3-4
    7.Seasoning-Mustard Seeds,Cumin,Urad Dal,curry leaves
    8.Salt as needed
    9.Oil

    UTENSIL;
    Deep pan

    METHOD OF PREPARATION:
    • Heat oil in a Kadai and add  the chopped onion,garlic and red chilis , saute it for few mins.
    • Then add Tomatoes and salt . Fry until the Tomatoes are cooked . Fry for sometime and let the spices blend well with the Tomatoes.
    • Now, add the Mint leaves and coriander leaves fry for a couple of minutes. Turn off the heat completely. Let the content Cool.
    • Grind it to a smooth paste by adding little water.
    • Finally do the seasoning with mustard,cumin,urad dhal and curry leaves and pour into the chutney .Tasty Chutney is ready

    Simple Coconut Chutney

    The breakfast of South Indians will normally be either idli with chutney, dosa with chutney or sambar, ven pongal or uppuma. Some also include urad dhal vada or methu vada in their regular breakfast like 2 idli, 1 vada or 2 dosa with 1 vada.Here is the simple coconut chutney receipe...

    INGREDIENTS U NEED:
    1.Grated coconut - 2cups
    2.Red chilli - 2
    3.Garlic-1clove
    4.Salt to taste
    5.Seasoning-Mustard seeds,urad,curry leaves,asafoetids a pinch
    6.Oil - 1 teaspoon

    METHOD OF PREPARATION:
    • First Grind coconut,red chilli, garlic to a fine paste in a blender.
    • Now Heat oil in tava. Spurt mustard seeds, curry leaves, asafoetida and pour it in paste. Add enough salt and mix well. Chutney is ready.  
    NOTE:
    The red chilli can be replaced by green chilli also and ginger can also be replaced by garlic.



    GOES WELL WITH:
       Idly ,dosa and pongal

    Onion Chutney(Premascookbook)

    I tried this onion chutney with dosa it tastes really so good so try it out .......

    INGREDIENTS U NEED:
    1.Red onions- 3
    2.Garlic- 5 cloves
    3.Red chilli-2
    4.Tamarind- 1 inch piece(small)
    5.Salt to taste
    6.Seasoning-Mustard seeds,Split urad dal,Curry leaves
    7.Oil- 4 tsp

    METHOD OF PREPARATION:
    • Peel, wash and cut the onions into cubes.
    • Heat 2 tsp oil in a pan and add the onions and peeled garlic.
    • Fry in oil till onions turn golden brown. Remove from fire and cool.
    • Grind the onion mixture with tamarind,Red chilli and salt.
    • Heat the remaining oil in a pan and season it with mustard seeds , urad dal and curry leaves. Add this to the ground onion paste.

          Idly or Dosa

    Peanut chutney with Raw Mango

    Peanut chutney with mango is a simple chutney and makes great accompainment to any breakfast items like idly, dosa, upma and pongal. It is all of our favourite chutney and i make it very often.Here it follows...

    INGREDIENTS U NEED:
    1.Fried Peanuts- 1cup(Skin removed)
    2.Mango-1cup(Remove the skin and chopped)
    3.Green chilli or Red chilli-2or3
    4.Garlic-2cloves
    5.Curry leaves-2strings
    6.Salt as needed
    7.Seasoning-Mustard,cumin,urad dhal,curry leaves
    8.Oil

    METHOD OF PREPARATION:
    • First grind all the ingredients from 1 to 6 with little water untill smooth in a blender.
    • Now heat a tablespoon of oil in a pan ,add seasoning once its starts spluttering pour it into the grinded chutney and serve.

    Potukadalai with Coconut Chutney

    Potukadalai chutney is very easy to make and it doesn't take much time at all and it tastes very good with any breakfast items and even for appetizers.Try it out...

    INGREDIENTS U NEED:
    1.Pottu kadalai – 1cup
    2.Green Chillies – 2 Nos
    3.Coconut-1/2cup
    4.Tamarind-little
    5.Salt as needed
    6.Seasoning-Mustard,Urad dhal,Jeera,curry leaves
    7.Oil

    METHOD OF PREPARATION:
    • First  grind pottu kadalai, green chillies, coconut, tamarind and salt together to a fine paste.
    • In a small kadai put the oil and when it is hot add mustard. When it pops up add urad dhal, jeera and curry leaves and fry till the urad dhal turn light brown. Pour this seasoning over the chutney.
    • Chutney is ready now.

    Mint Chutney(Solaiachi kitchen)

    Mint chutney will taste excellent with dosa and idly too. The procedure for mint, coriander and curry leaf chutney is almost the same.I tried it which came fantastic...

    INGREDIENTS U NEED:
    1.Coriander or mint or curry leaves-1 cup ( 1 kattu)
    2.Raw chillies-6 (if big use less)
    3.Small onion -20(if not available big onion-1 or 2)
    4.Grated coconut 4 table spoons
    5.Tamarind-a very small piece
    6.Salt to taste

    METHOD OF PREPARATION:
    • Keep the kadai in the stove. Pour 1 spoon oil. When the oil gets heated first add the onions and chilies .Let it cook for a minute. 
    • Then add the grated coconut allow this also to cook for a minute. Finally add the coriander. Mix everything well twice or thrice with the spatula. Switch off the stove.
    • Coriander need not get cooked much. If you are using mint or curry leaf instead of coriander allow those also to cook for 2 minutes. Coriander tastes good without much cooking. After the mixture gets cooled add the salt and tamarind and grind it in the mixie. It is not a must that you should season it after grinding, as everything is put in the stove before grinding. But if you are having guests then seasoning will make it more attractive and tasty. 
    • Season it with ½ spoon mustard and urud dhal.

    Peanut Chutney with Roasted Onion and Tomato(Cooking for all seasons)

    I tried this chutney with dosa it tastes so so yummy.

    INGREDIENTS U NEED:
    1.Roasted Groundnut - 1 cup (100 gms)
    2.Green chillies - 3-4
    3.Onion, medium - 1/2
    4.Tamarind - marble size
    5.Tomatoes - 1 medium
    6.Salt to taste
    7.Garlic pods - 5-6
    8. Seasoning (optional)
    9.Mustard seeds + Urud dal - 1/4 tsp
    10.Curry leaves few
    11.Oil - 1/2 tsp

    METHOD OF PREPARATION:
    • Chop the green chillies to small bits, peel the onions, soak the tamarind to make it soft.
    • Heat a pan, add 1 tsp of oil, saute green chilies, onions, tomatoes until they become light brown. Allow it to cool.
    • Then take all the roasted ingredients along with peanuts in a mixer and grind to coarse consistency but not to coarse. This should not be a smooth paste and do the seasoning and pour into the chutney.

    GOES WELL WITH:
        Dosas and Idlis.

    Mint and Corriander Chutney For Bajji ~ Kalyani

    Mint Corriander chutney is very simple to prepare and it goes as a very good combination for most of the indian appetizers like bajji,bonda,pakoda etc. Give it a try....

    INGREDIENTS U NEED:
    1.Mint Leaves-2cup
    2.Corriander leaves-1cup
    3.Tamarind-2inch
    4.Green chilli-3-4nos
    5.Salt-as needed

    METHOD OF PREPARATION:
       Blend all the ingredients with little water using blender untill smooth mixture.

    GOES WELL WITH:
          Bajji,Bonda and Samosa

    Peanut Chutney ~ Vasantha

    Peanut chutney is one of our whole family favorite chutney.I make this chutney in a simple way but this is how my home cook vasantha used to make it which is very yummy and delicious.It is the best combination for hot idlies and dosa. This is my most comfort food because I am addicted to its taste.Here i am sharing with all of u.

    INGREDIENTS U NEED:
    1.Peanut-1cup
    2.Onion-1medium(Roughly chopped)
    3.Garlic-2cloves
    4.Green chilli-2-3nos
    5.Cury leaves-1string
    6.Tamarind-2inch
    7.Seasoning-Mustard,red chilli,urad dhal
    8.Salt- as needed
    9.Oil

    UTENSIL:
    Small pan

    METHOD OF PREPARATION:
    • First heat the pan add peanuts fry it untill roasted and take it outside, remove the skin and keep it aside
    • Heat oil in the same pan add onion,garlic,green chilli,curry leaves,tamarind and fry it untill brown
    • Now grind the roasted peanuts with fried ingredients with salt and enough water in the blender untill smooth. 
    • Now do the seasoning with mustard,urad,red chilli and curry leaves and pour into the grinded peanuts.

      Urad Dhal Chutney ~ TV

      Urad dhal chutney is very tasty and healthy chutney perfect for idlis and dosa .This is another kind of making this chutney which i learnt it from tv and i made little changes.Its  easy to make here is the receipe......

      INGREDIENTS U NEED:
      1.Urad dhal-1cup(fry without oil untill brown)
      2.Red chilli-3nos
      3.Pepper-2tbs(fry without oil untill nice aroma)
      4.Salt-as needed
      5.Garlic-2cloves
      6.Tamarind-2inch
      7.Sesoning-1tbs(mustard,cumin,curry leaves)(optional)
      8.Oil-2tbs

      METHOD OF PREPARATION:
      • Grind all the ingredients from 1-6 together coarsly
      • Then for tampering heat oil in a  pan ,add seasoning once it start spluttering  pour this into the grinded chutney and mix it well.
