Chicken Meatballs (Sailusfood)

Tried recipe from sailus food.......

INGREDIENTS U NEED:
1/2 kg boneless chicken pieces, cleaned and washed
1/4 kg onions finely sliced
8-10 fresh green chillis
5-6 dry red chillis (adjust according to your choice)
15-20 garlic flakes
3″ piece ginger chopped
small bunch coriander leaves, chopped
4 tbsps coriander seeds
1 1/2 tbsps cumin seeds
2″ cinnamon stick
3 green cardamoms
5-6 cloves
20 cashewnuts
salt to taste
oil for deep frying

METHOD OF PREPARATION:
  • Heat a tbsp of oil in cooking vessel. Add the cumin seeds, coriander seeds, cardamom, cloves, cinnamom, red chillis and cashewnuts and stir for a minute till a nice aroma emanates the whole kitchen. Be careful not to burn the spices. Cool.
  • First grind the roasted ingredients along with ginger, garlic and green chillis to a coarse paste. Next add the chopped raw onions, coriander leaves, chicken and salt and grind further to form a smooth paste like shown in the picture above.
  • Add a tbsp of oil to the ground mixture and mix thoroughly before shaping into small lemon sized balls.
  • Heat oil for deep frying. Once its piping hot, reduce flame to medium and place these balls in the oil and fry them to a crisp, golden brown color.
  • Serve hot with tomato sauce or green chutney. 

NOTE:
The green and red chillis can be adjusted according to your spice level. The chicken balls can also be grilled for a more healthy version.

Chilli Chicken ~ Jothi

Yet another favorite dish of mine hot chilli chicken which i learnt it from my friend ....

INGREDIENTS U NEED:
1.Boneless Chicken – 1lb(cut into 1-inch pieces)
2.Onions – 2(sliced)
3.Gingergarlic paste – 3tbs
4.Tomato – 1(Chopped)
5.Green chillies – 3(Slicerd)
6.Corn flour – 2 tablespoons
7.Cumin powder-1tbs
8.Corriander powder-1tbs
9.Red color-pinch(Optional)
10.Soya sauce – 3 teaspoons
11.Vinegar – 2 teaspoons
12.Salt as needed
13.Egg-2
14.Oil  for deep fry and 3 tablespoon

METHOD OF PREPARATION:
  • In a bowl add cleaned chicken pieces with corn flour,soya sauce,salt,cumin and corriander powder,gingergarlic paste,vinegar,egg and enough salt ,Mix well and let it marinate for 2-4hrs in a refrigerator.
  • Heat oil in a pan for deep fry ,when the oil is hot add the marinated chicken in small batches and fry untill golden brown for about 5-10mins and drain it in the paper towel and set it aside.
  • Now heat 3tbs of oil in a pan, add sliced onion ,green chilli saute till golden brown and add the remaining sauce from the marinated chicken,sliced tomatos,soy sauce fry it untill cooked.
  • Finally add fried chicken and  saute on low heat for 5mins by stirring continually untill all coated well and switch off the heat and ENJOY!!!!

   Chapathi and Fried rice

Chicken Fry with Sakthi Chicken 65

Chicken mixed with sakthi chilli 65 powder  is a delicious dish made easy.Lets dig into the receipe....

INGREDIENTS U NEED:
1.Chicken-1lb
2.Sakthi chilli chicken 65 powder-1pack
3.Salt as needed
4.Oil for deep fry

METHOD OF PREPARATION:
  • Cut the chicken into medium pieces and wash it cleanly with water and drain it completely.
  • Now In a large bowl add sakthi chicken 65 powder ,add lemon juice and vinegar as per the instruction and enough salt and mix it  and add chicken and mix it well altogether .
  • Let it marinate for couple of hours and deep fry in the oil untill golden brown in a medium flame and serve hot.

GOES WELL WITH:
     Fried rice

Chicken Liver Fry

Chicken liver is high in iron really good for health.I make it quite often here is how i make it..

INGREDIENTS U NEED:
1.Chicken liver-2cup
2.Onion-1small(Finely chopped)
3.Tomato-1small(Finely chopped)
4.Garlic-4cloves
5.Cinnamon-1little
6.Cloves-2
7.Curry leaves -1string
8.Pepper powder-2tbs
9.Salt as needed
10.Oil

METHOD OF PREPARATION:
  • First crush the garlic,cinnamon,cloves using mortar and pestle and set it aside.
  • Heat oil in a pan,add crushed garlic,onion,curry leaves saute it for few mins.
  • Then add tomato fry it for few mins,add liver,salt  and turmeric powder and cover with the lid and cook it untill dry.
  • Finally add pepper powder and mix it well and garnish with corriander leaves and switch off the flame.
    GOES WELL WITH:
         Sambar rice

    Chicken Fry ~ Balamma


    INGREDIENTS:
    1.Chicken-1lb
    2.Onion-1small(Chopped)
    3.Mint leaves-1/2cup(Chopped)
    4.Corriander leaves-1/2cup(Chopped)
    5.Curry leaves-2strings
    6.Turmeric powder-1/4tbs
    7.Salt as needed
    8.Oil

    GRIND:
    Sombu-1tbs
    Cinnamon-1
    Ginger-little
    Garlic-5cloves
    Onion-1
    Green chilli-3
    Pepper-1tbs
    Fry this ingredients in 1tbs of oil and grind it using water untill smooth.

    METHOD OF PREPARATION:
    • Heat oil in a pan,add onion and saute it for few mins,then add curry leaves,mint leaves and corriander leaves and saute it few mins.
    • Now add chicken and salt let it cook for 5-10mins.
    • Then add grinded mixture and let it cook for 10-15mins or  untill done and serve hot.

    GOES WELL WITH:
          Fried rice

    Pepper Chicken Fry(Life is beautiful)


    INGREDIENTS U NEED:
    1.Chicken- 1/2 kg(Cut into small pieces)
    2.Onions - 1(Sliced)
    3.Green chillies-3(Finely chopped)
    4.Black pepper corns - 2 tbspn
    5.Turmeric powder- 1/4 tspn
    6.Salt to taste
    7.Oil- 4 tbspns 
     
    METHOD OF PREPARATION:
    • Heat oil in a pan. When the oil is hot enough add the onions, green chillies, salt and turmeric powder. Simmer the flame. Saute the onions until they become soft.
    • Now add the chicken pieces and mix well. Let the chicken cook in a low flame. Mix the onion, chicken mixture frequently.
    • When the chicken is cooked add the coarsely powdered black pepper and mix well. Remove from fire after 2 minutes. A very tasty pepper chicken will be ready.

    Traditional Villagestyle Chicken Curry

    Traditional chicken curry cooked here in our village in most homes is very simple.The traditional style of cooking here involved the natural spices.This chicken recipe is a basic chicken gravy curry.Simple,easy and tasty!

    INGREDIENTS U NEED:
    1.Chicken - 1/2 kg(Cleaned and cut into pieces)
    2.Onion - 2(Finely chopped)
    3.Tomato - 2(Finely chopped)
    4.Chilli powder-2tbs
    5.Corriander powder-1tbs
    6.Pepper powder-2tbs
    7.Turmeric powder - 1/4tbs
    8.Curry leaves - 1 strings
    9.Cilantro for garnish
    10.Oil - as needed
    11.Salt - as per taste

    TO CRUSH:
    Ginger-1inch
    Garlic-6cloves
    Cinnamon-1
    Cloves-3

    UTENSIL:
    Heavy bottomed pan

    METHOD OF PREPARATION:
    • Heat oil in a pan,add chopped onions saute till the onions turn translucent,then crushed add ginger garlic paste and saute it untill raw smell goes or untill brown
    • Now add chicken,turmeric powder and salt and saute well till the pieces turn white on the outer for about 5-10mins
    • Then add tomatos,chilli powder,corriander powder cover and cook untill the chicken are tender.
    • Finally add pepper powder and curry leaves and garnish with corriander leaves and switch off the stove.

    GOES WELL WITH:
          White rice

    Villagestyle Arachuvitta Chicken Kuzhambu

    cken curry is one of the famous recipe in all non veg restarants. Its mine and my husband all time favorite dish because the awesome thing about this recipe is that you grind all of the required masala. If i make chicken curry, i generally need to keep more rice than usual. It will go very well with plain rice or a side dish for fried rice or dosa or chapathi.There are always different people preaparing in differrent style. This particular is that i learnt from my MIL. My grand parents are from a small village in south india and there is always a liking for us towards the village recipes. The reason behind that is the taste,They always taste the best, because the ingredients and the masala, that they use are freshly prepared. Well,The recipe of my favorite chicken curry is here........

    INGREDIENTS :
    1.Chicken - 2lbs(Cleaned and cut into pieces)
    2.Big Onions - 3 ( Chopped)
    3.Tomatoes - 2 ( chopped)
    4.Turmeric powder - 1/4 tsp
    5.Salt - To taste
    6.Corriander leaves - 1 hand full
    7.Vadagam-2
    8Oil - To fry

    GRIND 1:
    Fry the below ingredients in a pan untill nice aroma and grind smoothly with little water
    Red chilli-6
    Corriander Seeds-3tbs
    Cumin-1tbs

    GRIND 2:
    Ginger-small piece
    Garlic-8clovesCinnamom-1
    Cloves-3

    UTENSIL:
    Heavy bottomed pan

    METHOD OF PREPARATION:
    • Take a heavy bottomed  add oil, add the grinded masala no.2 paste and fry till golden brown
    • Now add the onions , fry till golden brown, then add the chopped tomatoes,turmeric powder and salt and fry it for few mins.
    • Now add the chicken pieces and let it cook for 10mins,
    • Now add the grinded masala no.1 and fry it for 5 mins,Then add little water to it  and mix well.
    • Close the vessel and cook for 15-20 mins by Stiring it inbetween
    • Finally do the vadagam seasoning and pour into the chiccken curry and mix well.

    GOES WELL WITH:
           Hot steamed rice

    Chicken Salna(Veetusamyal)

    I tried this chicken salna with parotta it turned out fine.

    INGREDIENTS U NEED:

    Marinade:
    chicken-1lb
    salt-required
    chilli powder- 3/4 tsp
    turmeric powder
    lemon juice
     
    DryRoast & Grind:
    sombu- 1tsp
    jeera- 1 tsp
    peppercorns- 3/4 tsp
    red chillies- 4
    pattai- 1/2"

    Masala:
    roughly chop everything and roast in 2 tsp oil.
    Onion- 1
    garlic- 5 pods
    ginger- 1/2"
    tomato- 1
    coconut- 1/4 to 1/2 cup

    METHOD OF PREPARATION:
    • Heat oil in a kadai and fry coconut until color changes. set aside. 
    • Roast the rest of the ingredients under masala until soft. grind this along with the coconut until smooth.
    • Heat oil in cooker and fry chicken for 2- 3 mins. Then add all the masalas. Add required salt. 
    • Mix well and pressure cook for 2 whistles. 
    • Finally add corriander leaves.
    • Chicken chalna is ready.

    Kerala Chicken Fry ~ Reshma

    Chicken fry is a good combination for  fried rice.This chicken fry is the simplest way to prepare which i got it from my friend reshma.Usually I cook the chicken in its own water till almost dry and untill thick and also this dish requires less oil, quick and tasty.Enjoy....

    INGREDIENTS U NEED:
    1.Chicken-1lbs
    2.Ginger garlic paste-3tbs
    3.Turmeric powder-1/2tbs
    4.Pepper powder-2tbs
    5.Chilli powder-2tbs
    6.Corriander powder-1tbs
    7.Onion-2(Finely chopped)
    8.Corriander leaves-for garnish
    9.Salt-as needed
    10.Oil

    UTENSIL:
    Wide frying pan

    METHOD OF PREPARATION:
    • First clean the chicken well with water and marinate chicken pieces with gg paste,turmeric powder,pepper powder,salt ,corriander powder and chilli powder for 2-3 hrs.
    • Now heat oil in a pan add onion fry in the low flame untill golden brown.
    • Then add marinated chicken fry well in a medium flame untill cooked and well done untill thick and garnish with corriander leaves.

        Fried rice

    Moms Chicken Curry

    This chicken curry main dish is one of  my favorite dish.It uses the ingredients like ginger, garlic and spices all common in our cooking in south india  .This chicken curry which is more of dry preparation with less gravy.  My mom makes this curry so often and whatever it is when our mom makes it tastes delicious so find below for the receipe....

    INGREDIENTS U NEED:
    1.Chicken-1/2kg(cut into medium pieces and clean it)
    2.Ginger-2inch
    3.Garlic-4cloves
    4.Onion-1(chopped)
    5.Tomato-1(chopped)
    6.Chilli powder-2tbs
    7.Corriander powder-1tbs
    8.Turmeric powder-pinch
    9.Salt-as needed
    10.Seasoning-small cinnamaon,cloves 2
    12.Oil
    13.Corriander leaves-to garnish

    GRIND:
    Onion
    Tomato
    Ginger
    Garlic

    UTENSIL:
    Big bottomed pan

    METHOD OF PREPARATION:
    • Heat oil in a pan ,add seasoning ,add grinded masala,turmeric powder,chilli  powder,corriander powder and salt fry it untill brownish in color.
    • Now add chicken mix well and cook till done by adding  enough water and remove from fire when oil separartes and garnish with corriander leaves  and check the chicken are well cooked.

          Plain rice and dosa

      Chicken Curry ~ Ashwini

      This chicken receipe really goes very well with  with both white rice, biryani and rotis. It makes a great curry with dosas and vadas too.Me and my daughter love to eat anything with chicken in it .I make chicken in different kind this is one kind which i learnt it from my friend ashwini who is very good nonveg maker whenever we had a potluck she makes mutton biryani with this chicken curry .In future i will be posting lot of varieties of making chicken curry.Here this receipe goes...

      INGREDIENTS U NEED:
      1.Chicken-1kg
      2.Gingergarlic paste-2tbs
      3.Chilli powder-3tbs
      4.Corriander powder-2tbs
      5.Cloves-2Cinnamon-1stick
      7.Lemon juice-1/4tbs
      8.Food color-pinch
      9.Seasoning-1tb(mustard,curry leaves)
      10.Onion-1(chopped)
      11.Green chilli-5(chopped)
      12.Salt-as needed
      13.Oil-5tbs
      14.Corriander leaves-to garnish

      UTENSIL:
      Big bottomed pan

      METHOD OF PREPARATION:
      • Marinate the chicken with gingergarlic paste,chilli powder,corriander powder,cloves,cinnamon,lemon juice and food color for 2hrs
      • Meanwhile heat oil in a pan ,add seasoning,onion,green chilli saute it untill onion becomes translucent
      • Then add marinated chicken,salt and  little enough water fry it cook it untill you get the desired gravy consistency mix it well and garnish with fresh chopped corriander leaves.
         GOES WELL WITH:
           Plain rice and Biryani

        Chicken 65

        Chicken 65 is one of the popular dishes served in the non-vegetarain restaurants and fast foods in India. This is very simple and easy to make i make it quite often because this is my daughters  favorite snack in the evening after school .This dish is always on my party menu or getogethers at my home.There goes the receipe...

        INGREDIENTS U NEED:
        1.Chicken drumsticks-6(cut into medium pieces and clean it)
        2.Hometown chicken 65 powder-1packet or any chicken 65 powder
        3.Besan flour-1tbs
        4.Salt-as needed
        5.Oil-for deep fry

        UTENSIL:
        Deep bottomed pan

        METHOD OF PREPARATION:
        • Combine all the ingredients from 1 to 4 in a bowl  and mix it well and marinate for 1-2hours
        • Heat oil in a pan and deep fry the marinated chicken pieces in the medium flame untill golden brown and crispy.

          GOES WELL WITH:
                 Sambar rice and rasam rice

          Chicken Curry ~ Anu

          Chicken curry is made with meat and all flavourful spices like ginger ,garlic and garam masala .I make this curry in different ways ,each and every family has differnet style of making even most of the ingredients are same the tastes varies.I learned to make this curry from one of my friend anu. This curry goes well with parotta and dosa .Give it a try....

          INGREDIENTS:
          1.Chicken - 1lbs(cut into medium pieces and wash it cleanly)
          2.Green chilly-3(chopped)
          3.Onions-1(chopped)
          4.Tomato-1(chopped)
          5.Chilli powder-1tbs
          6.Garam masala powder-1tbs
          7.Salt-as needed
          8.Curd-1tbs
          9.Oil

          GRIND:
          Fry all this ingredients in a little oil and grind it smoothly
          Cinnamon-1
          Cloves-3
          Saunf-1/2tbs
          Cumin-1tbs
          Onion-1/2
          Ginger-little
          Garlic-5cloves
          Coconut-1/4cup
          Greenchilli-3
          Curry leaves-little
          Corriander leaves-little
          Pepper-1tbs

          UTENSIL:
          Big bottomed pan

          METHOD OF PREPARATION:
          • Heat little more oil in a pan, add green chilly,onions,turmeric powder,garam masala powder and saute untill onions turns translucent.
          • Then add tomato,chicken,chilli powder,salt and curd let it cook untill the chicken leaves water or for about 10-15mins.
          • Finally add grinded paste let it cook untill u get the required consistency and garnish with corriander leaves

            GOES WELL WITH:
                 Parotta,Biryani and chappathi

            Chicken Fry ~ IndiaInteracts

            Chicken fry is very hot and spicy dish which is my favorite dish too.In my home major part of nonvegetarian dishes are made with chicken and fish.Alright this is one version of making chicken fry which i got it from india interact.com. I make so many kinds of  fry with chicken which i will post in future now i am sharing this dish with everyone here it is....

            INGREDIENTS U NEED:
            1.Chicken legs-6pieces(cut into cubes)
            2.Onions-1
            3.Green chilly-5
            4.Gingergarlic paste-2tbs
            5.Garam masala powder-1tbs
            6.Pepper powder-1tbs
            7.Turmeric powder- pinch
            8.Chilli powder-1tbs
            9.Corriander powder-1/2tbs
            10.Oil- for frying
            11.Cinnamon-1stick
            12.Cloves-4
            13.Bayleaves-1
            14.Salt-as needed

            UTENSIL;
            Big bottomed pan(kadai)

            GRIND COARSLY:
            Onion
            Green chilly

            METHOD OF PREPARATION:
            • Mix chicken with coarsly grinded masala,chilli powder,corriander powder,salt,turmeric powder,gingergarlic paste and let it marinate r0r 1-2hrs.
            • In a big pan add little more oil ,add cinnamon,cloves,bayleaves,add marinated chicken fry nicely untill thick and brown about 30mins
            • Finally add garam masala powder,pepper powder and fried curry leaves and cashews and then garnish with fresh corriander leaves.
            GOES WELL WITH:
                 Fried rice and Rasam rice

            Chicken with Mocha or Potato Kuzhambu

            Chicken with mocha is a very good combination.This kuzhambu is different and fabulous with plain hot rice and dosa.Chicken kuzhmbu has so many versions and variations but this is how my MIL always prepares this dish every sunday along with plain rice and mutton fry or fish fry for lunch.In back home they used to make this curry with nattu kozhi which means country chicken oh my god it tastes so so yummy but anyways here is the receipe for this lip smacking chicken kuzhambu...

            INGREDIENTS :
            1.Chicken - 1/2kg(cut into medium pieces and cleaned)
            2.Dried split mochai - 1/2cup( soaked in water for 30mins or boil untill cooked)
            3.Chilli powder - 1tbs
            4.Corriander powder - 1tbs
            5.Turmeric powder - a pinch
            6.Oil
            7.Corriander leaves - for garnish
            8.Salt -as needed

            GRIND AS A PASTE:
            Ginger-2inch
            Garlic-5cloves
            Cinnamon-1inch
            Cloves-4

            UTENSIL:
            Deep bottomed pan

            METHOD OF PREPARATION:
            • Heat oil in a pan and saute onions and ginger garlic paste untill transculent for few mins
            • Add chicken,salt,turmeric powder let it cook untill chicken leaves water and keep it in the medium flame
            • Now add chilli powder,corriander powder,mochai and stir gently for few minutes and add enough water to and chicken and  cook the gravy in medium flame until the oil gets separates.
            • Add the chopped corriander leaves to the kuzhambu and put off the stove
            GOES WELL WITH:
                Plain rice and dosa
