Aval Mixture (VeggiePlatter)

Tried recipe and its a very good tea time snack......

INGREDIENTS U NEED:
1.Poha/Aval Thick-2cups
2.Peanuts-1/2cup
3.Cashewnuts-1/2cup
4.Roasted chickpeas-4tbs
5.Red chilli-5(Slit)
6.Turmeric powder-1/4tbs
7.Seasoning-Mustard seeds,Curry leaves
8.Salt as needeed
9.Oil for deep fry

METHOD OF PREPARATION:
  • Heat more oil in a pan for deep fry, add peanuts and fry till they turn golden brown and remove them and keep it aside and do the same for cashewnuts.
  • Then add poha in small batches in the same hot oil within couple of seconds it floats on the surface ,now remove it and drain it in the paper towel.
  • Now heat 2tbs of oil in a flat pan,add mustard seeds,red chilli,curry leaves and turmeric powder once it starts to pop switch off the heat.
  • In that pan add fried poha,peanuts,cashewnuts,roasted chickpeas and enough salt and mix it well.

Spicy Peanuts

Spicy peanuts are very good munchy tea time snack with cup of coffee, when its spiced up with chilli powder and garlic its so yummy.Here is how i make it.....

INGREDIENTS U NEED:
1.Peanuts-3cup
2.Cashewnuts-1cup
3.Curryleaves-2strings
4.Garlic-8cloves with skin on(Crushed)
5.Chilli powder-2tbs
6.Salt as needed
7.Oil

METHOD OF PREPARATION:
  • Heat 5tbs of oil in a kadai,add peanuts and fry on the low flame so that it gets cooked well and keep aside.
  • In the same pan add little oil,add cashews and fry in the  low flame untill it turns brown and set aside.
  • Now In the same pan add 2tbs,add curry leaves,crushed garlic for few mins,add fried cashews and peanuts saute it for few mins.
  • Finally add chilli powder and salt and toss everything together and switch off the flame.
  • Let it cool down and now enjoy!!!!!

ChannaMasala Vada ~ MIL Version

Channa masala vada is a very  popular snack in south indian cuisine. It can be eaten as a snack or as a part of the meal.Here is how my MIL makes it.....

INGREDIENTS:
1.Channa dhal/Kadalaparuppu-2cups
2.Green chilli-2(Finely chopped)
3.Onion-1(Finely chopped)
4.Corriander leaves-1cup(Finely chopped)
5.Mint leaves-1cup(Finley chopped)
6.Curry leaves-2strings
7.Salt as needed
8.Oil for deep fry

GRIND:
Ginger-1inch
Garlic-3
Saunf-1/2tbs

METHOD OF PREPARATION:
  • Wash and soak the channadhal in water for 2-3hrs and drain the water completely and coarsly grind the dhal with enough salt, little water and grinded paste.(Do not add too much water, add very little just sufficent for grinding)
  • Take out the grinded dhal in a large bowl,add chopped onion,green chilli,corriander leaves,mint leaves,curry leaves and mix it well.
  • Heat enough oil for deep fry in a deep pan, when the oil is hot enough, turn the heat to medium because Vada should be fried on medium heat.
  • Now Shape the batter into 1 ½ inch round on your palm and lightly press them to flattish shape. Fry these vadas in oil till golden brown from both sides turning as needed. Drain on an absorbent paper and serve masala vada hot.

     Fried rice

Upma with Leftover Idly

Idly upma is a very good quick evening snack when u have left over idlies.I absolutely love this upma.I prepare large quantities of idly and the leftover idly i store them in refrigerator and prepare upma on the next day or the same day .Here it is how i make.....

INGREDIENTS U NEED:
1.Idlis -5no
2.Onion-1(Finely chopped)
3.Green chilies- 3(Finely chopped)
4.Curry leaves- 1string
5.Turmeric-Pinch
6.Corriander leaves- 2strands(Finely chopped)
7.Seasoning-Mustard seeds,Urad dhal(Little more),Channa dhal
8.Salt as needed
9.Oil

METHOD OF PREPARATION:
  • First in a large bowl Powder the idlis by using hand and it should not be big lumps.
  • Now Heat oil and add mustard seeds. When they start popping up, add urad dhal,channa dhal,curry leaves and  green chillies and Fry it.
  • Then add chopped onions and saute it for few mins.
  • Add turmeric and powdered idlis and Mix well. If required, add salt (Idlis will have salt, so be careful while adding extra salt).
  • Finally Garnish with chopped corriander leaves and serve hot.

Egg Puffs

Egg puffs is very good evening tea time snack which is very easy and simple to make.Here how it goes..

INGREDIENTS U NEED:
1.Puff Pastry-1 sheet(Thawed for atleast 30 minutes)
2.Boiled Eggs-3(Cut into halves, lengthwise)
3.Onion-3(Sliced)
4.Egg-1(Beat well)
5.Turmeric powder-1/4tbs
6.Pepper powder-2tbs
7.Salt as needed
8.Oil

METHOD OF PREPARATION:
  • First To prepare Onion egg Masala, heat oil in a pan, add onion, saute until golden brown. Then add salt,turmeric and pepper  powder and  then add boiled egg and mix it well Keep it aside and let it cool down.
  • Secondly Cut the thawed puff pastry into 6 squares each approximately about 3.5 inches wide by 5 inches long.
  • Place a spoonful of onion egg masala in the middle , cut side down.
  • Fold the two ends of th strip, so that it encloses the egg. Seal the edges by applying very little water or  using fork and keep it in the oven tray.
  • Brush the top of the puffs with egg wash(Beated egg).
  • Preheat oven for 375 deg and Bake these for about 15-20 minutes. Serve hot with ketchup!

Bhel Mix

Bhel Mix is a very famous and tasty chat and a street food which can be find anywhere in India. Everyone has a different style of making bhel.Any version of this dish is delicious but this is how i make it very simple and easy .

INGREDIENTS U NEED:
1.Bhel mix-5 cup
2.Onion-1(Finely chopped)
3.Carrot-1(Grated)
4.Tomato-1/2(Finely chopped)
5.Green chillies-1(Finely chopped)
6.RoastedPeanuts -1/2cup
7.Corriander leaves-1/2cup(Finely chopped)
8.Bhel chutney-1/4cup  

METHOD OF PREPARATION:
  • In a big wide vessel, mix all the ingredients thoroughly  and serve. 
  • After mixing the bhel, serve it immediately otherwise it will become soft.

KuzhiPaniyaram

Kuzhipaniyaram is made with leftover idly or dosa batter .It is my favorite teatime snack which my moms makes it all the time.My kids love this dish here is how my mom makes it...

INGREDIENTS U NEED:
1.Idly or Dosa Batter -5cups
2.Onion-1(Finely chopped)
3.Green chilli-2(Finely chopped)
4.Corriander leaves -1/2bunch(Finely chopped)
5.Seasoning-Mustard,Cumin,Channa dhal,Curry leaves
6.Salt as needed
7.Oil

UTENSIL:
Kuzhipaniyaram kadai

METHOD OF PREPARATION:
  • First Mix the batter with,salt,water and keep it aside.
  • Now heat oil in a pan,add seasoning let it crackle then add onion and saute it for few mins and let it cool down and add this to the batter.Let it be slightly thicker than the cake batter because Runny batter tends to absorb more oil.
  • Heat the kadai and add few drops of oil into each hole. Fill 3/4th of each one with the  batter. Keep the flame steady to medium .
  • Wait till the bottom turns golden brown for about 2-3 minutes.Turn each upside down, carefully.Trickle a few drops of oil if necessary.Cook for another 2-3 minutes to get them cooked and turn over again if you like them more crispy. Remove and repeat the same with the next batch. Serve warm.

      Tomato Chutney

Boiled Dry Peanuts

This is my favorite snack of all times which is very simple to cook.Its really easy to make, it makes for a great party snack too.Here it goes...

INGREDIENTS U NEED:
1.Dried peanuts- 2cup
2.Salt as needed

UTENSIL:
Big pot

METHOD OF PREPARATION:
  • First soak the peanuts in water for 2hrs and drain the water 
  • Now Fill a large pot of cold water and salt it liberally about 2tbsp. Add the 2 cups of raw peanuts to the cold water and place it on high heat. As soon as the water comes up to a boil, reduce the heat to medium-high.
  • Let is gently boil for another 15-30 minutes or until the peanuts are completely cooked. It should have a bite to it yet be soft to bite into. Drain and let it cool to room temperature and its ready to eat.

Corn Flakes Mixture

Corn flakes mixture is a combination of everything like all spices and store bought kellogs plain cereals also called as chivda which is a Maharashtrian snack.It is Surprisingly easy to make but so satisfying snack.The variations of this mixture are endless but this is how i make it simple with my taste.Enjoy!!!

INGREDIENTS U NEED:
1.Kellogs original Corn flakes-5cups
2.Poha-2cup
3.Puffed rice-1cup
4.Peanuts-1cup
5.Kalai-1/2cup
6.Chilli powder-1tbs
7.Chat masla-pinch
8.Amchur powder-pinch
9.Cumin powder-pinch
10.Salt-as needed
11.Sugar-pinch
12.Cashews-1/2cup
13.Raisins-1/2cup
14.Almonds-1/4cup
15.Seasoning-1/4tbs(mustard)curry leaves
16.Oil-5tbs

UTENSIL:
Big wide pan

METHOD OF PREPARATION:
  • First fry the poha in the pan fry it untill crisp or u can deep fry it or microwave it and keep it aside. 
  • Heat oil in a big wide pan,add the mustard seeds and when they start sputtering,add curry leaves, peanuts, raisins,cashews,almonds
  • Cook it for about a 5 minute and then add the kalai ,chilly powder,turmeric powder,amchur powder,chat masala powder and add salt.
  • Add the corn flakes,poha and puffed rice,turn off the heat, mix till they are well coated with all the spices
  • Let cool slightly before adding a couple of tablespoons of sugar,adjust the salt as per the taste.

    NOTE:
    Stored in an airtight container, cornflakes mixture will stay fresh for at least a week. But honestly, it will be gone within days.

    Diamond chips with Maida

    Maida chips is one of the very good favorite snack since my childhood which my mom makes it all the time and also reminds my childhood memories. Anyways this chips is a finger food snack that can be enjoyed along with afternoon tea or coffee but for me it is a anytime snack.It can be made either with sweet or spicy now i am making spicy one.It is a very crunchy and easy snack . So Enjoy!!! 

    INGREDIENTS U NEED:
    1.Wheat flour-2cups
    2.Maida-2cup
    3.Egg-1 
    4.Salt-as needed
    5.Hot oil-5tbs
    6.Oil-for deep fry

    UTENSIL:
    Deep frying pan

    METHOD OF PREPARATION:
    • Mix wheat flour, maida flour,cracked egg,salt and hot oil in a bowl and add water as needed and knead it well and let it sit for 1hour and make a soft dough like you do for chappati.
    • Then take a handful scoop of the dough roll it to a round ball using your palm.
    • Later flatten the ball using a rolling pin,Use maida flour for easy rolling and cut it using a knife into diamond shape or any shape.
    • Meanwhile get the oil hot for deep frying in a frying pan. 
    • Once the oil is ready, drop those cut dough into oil gently and allow it to fry nice in the oil. 
    • Take it out once it turns to golden brown. Eat it once it cools down.

       NOTE:
      Can be stored in a air sealed container for a month or more.

          Coffee or tea

      Kachayam/Sweet Paniyaram ~ Nimi

      Kachayam is  a sweet dish called sweet paniyaram or suyam in tamil made with three main ingredients like rava, maida  and sugar  which i  adopted from my friend nimi which is very simple to make so definetely try it out....

      INGREDIENTS U NEED:
      1.Rava - 1cup
      2.Maida- 11/2cup
      3.Sugar- 1cup
      4.Cardomom powder - little
      5.Soda- pinch
      6.Oil-for deep fry

      UTENSIL:
      Deep bottomed frying pan

      METHOD OF PREPARATION:
      • Soak the rava in enough water for 2hours
      • In a soaked rava add maida,salt,soda,sugar,cardomom powder mix it together nicely like a bonda consistency
      • Deep fry in the oil in the medium flame untill golden brown
