Chicken Biryani with Coconut Milk ~ MIL Version

Chicken biryani with coconut milk is one of the best biryani my MIL makes at home.Here is how she makes it...

INGREDIENTS:
1.Chicken-2lbs
2.Onion-2(Sliced)
3.Tomato-1(Chopped)
4.Green chilli -5(Sliced)
5.Coconut milk-3cup
6.Curry leaves-2strings
7.Mint leaves-1/2bunch(Chopped)
8.Corriander leaves for garnish
9.Salt as needed
10.Oil

GRIND:
Ginger-2inch
Garlic-6cloves
Cinnamon-2
Cloves-4

METHOD OF PREPARATION:
  • Heat oil in a big heavy bottomed pan ,add oil,add grinded masala ,chopped onion saute it for few mins then add green chilli,curry leaves,mint leaves and mix it for few more mins.
  • Then add tomato,salt and turmeric powder and saute it well for 5mins
  • Now add chicken and let it cook for 5-10mins
  • Then add coconut milk and let it boil well.
  • Add washed rice mix well and cover with a lid and  cook it on the medium flame.
  • Once its done switch off the gas and serve hot by garnishing chopped corriander leaves.

Vegetable Pulav ~ Shanthy

Pulav generally means comfort food. This pulav can be made with leftover rice or by freshly cooked rice.This receipe is from my friend shanthy it came out delicious.Here i am with receipe.....

INGREDIENTS U NEED:
1.Rice -3 cups (precooked and cool it down it should not be sticky).
2.Vegetables-2 cup Fresh or Frozen (Chopped into medium pieces)
(Italians beans,carrots and peas)
3.Onions- 2 large( sliced lengthwise)
4.Tomatoes- 2 medium ( chopped)
5.Ginger Garlic paste- 11/2 tbsp
6.Seasoning-1Cinnamon,2 cloves,3 cardamoms,1 Tsp cumin and couple of black pepper
7.Corriander powder-1tbs
8.Biriyani masala powder-1tbs
9.Mint -1cup(Finely chopped)
10.Cilantro-1cup(Finley chopped)
11.Green chillies-3(Slit)
12.Yogurt -11/2cup( blend in the blender to make smooth)
13.Cashews and raisins or just cashews only
14.Ghee-2tbs
15.Oil-4tbs

UTENSIL;
Big deep pan

METHOD OF PREPARATION:
  • Wash rice and soak for 15 min and Cook with enough water till done and leave a side to cool in a large bowl.
  • Now heat oil and ghee in a pan add all the seasoning and cashews one by one let them popup then add green chilies and fry for few mins.
  • Now add chopped onions and salt fry till golden color then add ginger garlic paste and fry for 3 min.
  • Then add mint leaves and corriander leaves fry it ,then add corriander and biryani powder saute gently
  • Now add beans ,carrot ,peas and tomatos and mix well and cover it for 5-10mins untill the vegetables are cooked well.
  • Finally add curd and cook it for 2-3mins and turn off the stove.
  • Now add cooked rice to the vegetable mixture, mix it very well  and adjust the seasoning and switch off the flame.

My version of Mutton Biryani

Mutton biryani is one of my favorite dish.I make this biryani atleast one every month which tastes very well with raita and chicken fry.Here is the receipe  

INGREDIENTS U NEED:
1.Goat or lamb meat cut into medium sized pieces - 2lbs
2.Gingergarlic paste -3tbs
3.Onion thinly sliced -3cups
4.Tomato - 2
5.Mint leaves -1bunch
6.Corriander leaves-1/2bunch
7.Basmati Rice-4cups
8.Chilli powder-2tbs
9.Corrinader powder-1tbs
10.Cumin powder-1/4tbs
11.Garam masla powder-1tbs
12.Salt to taste
13.Curd-2tbs
14.Lemon juice-2tbs
15.Seasoning-Cinnamon,fennel seeds,cardamom,cloves,star anise,bay leaves
16.Oil

METHOD OF PREPARATION:
  • Wash and soak the rice in cold water for at least 30 minutes.
  • In a pan, heat some oil , add all the seasoning and onion and saute it for few mins,then add gingergarlic paste,mint leaves and corriander leaves fry it for few mins
  • Then add tomatoes,mutton pieces,chilli powder,corriander powder,cumin powder,garam masala powder and salt  let it cook untill the pieces are half cooked
  • Then add water(1cup rice:11/2water),lemon juice and curd let it boil for 5mins
  • Then add rice and slow down the stove and cook it for 30-45mins
  •  Switch off the stove and let stand till it cools down.
  • Delicious mutton biryani is ready. Garnish with coriander leaves, squeeze a fresh lime over the biryani and serve it

Tomato Biryani(Vikis Kitchen)

Thakkali briyani served with onion raitha and potato fry tastes really good.Definetely give it a try...

INGREDIENTS U NEED:
1.Basmathi rice / Jeeraga samba raw rice - 2 cups
2.Tomato - 4 (200 gm)
3.Ginger garlic paste - 1 tsp
4.Turmeric powder - 1/8 tsp
5.Red onion - 1 (medium size)
6.Green chillis - 3 (slit).
7.Red chilly powder - 1 tsp
8.Garam masal powder / biryani masal powder - 1 tsp
(I used Shakthi biryani masala powder)
9.Cilantro- 10 stems
10.Mint leaf -1 handful.
11.Ghee - 2 tbsp (to add at the end)

To temper:
Fennel - 1 tsp
bay leaves - 2
star aniseed - 1,
cinnamom stick - 2 inch
cardamom - 2
cloves - 4
Any cooking oil - 3 tbsp
cashew nuts -10
salt - to taste

METHOD OF PREPARATION:
  • First Wash the rice and soak it for 1/2 an hour. Add 1/2 tsp salt. Add excess water and cook the rice to firm stage (100% cooked , but not mushy). Strain and remove the excess water using a colander. Keep open and let it cool.
  • Secondly Wash and clean the tomatoes. Puree them. Keep aside.
  • Now Heat 2 tbsp oil in a thick flat bottom vessel.
  • Add fennel ,star aniseed , cinnamon stick,cardamom ,cloves, bay leaf , cashew and saute for a few seconds.
  • Put the chopped onion . Fry it till golden brown and add the ginger garlic paste and stir well till the raw smell goes. Then add the chopped chillies, chopped cilantro + mint and stir well.
  • Now add the tomato paste along with red chilly powder and biryani masala powders.
  • Add salt to taste. Cook till oil oozes out.
  • Mix with the cooked rice without breaking the grains.
  • Tomato biryani is ready!

     Fish fry and Raita

Hyderabadi Chicken Dum Biryani

Chicken dum biryani is our favorite meal in my home which i learnt it from my cousin sister.I make biryani pretty much every week.Anways  Making Biryani is never that easy, it is normally a multi step process like marinating the meat,fry the onions,cook the rice and layer it etc, it is a slightly complicated process but the end result is fantastic.Ready to eat here is the receipe...

INGREDIENTS U NEED:
1.Basmati rice
2.Chicken with bones-1pound
3.Yogurt-4tbs 
4.Onion-4(Thinly sliced)
5.Tomato-1(Finely chopped)
6.Green chilli -6(Slit into two)
6.Chilli powder-3tbs
7.Coriander powder-1tbs
8.Star anise-2
9.Cloves-6
10.Cardamoms-10nos
11.Cinnamon-2inch
12.Shahjeera-pinch
13.Mint leaves-1/2cup(Minced)
14.Corriander leaves-1/2cup(Minced)
15.Salt to taste
16.Red Food color-pinch
17.Oil

UTENSIL:
Deep bottomed pan with a heavy base and a tight lid.

METHOD OF PREPARATION:
  • First Marinate the meat with curd,red chilli powder,Garam masala powder,cumin powder,biryani masla powder,chopped tomato,chopped onion, lemon juice, half of the chopped mint and cilantroand salt and let it marinate for 2-3hrs .
  • Meanwhile Heat oil in a pan ,add the onion slices and fry till they start to brown and keep it aside.
  • In a small pan heat oil,add cardamoms,cinnamon stick,cloves, staranise, mace, bay leaf and shajeera.
  • In boiling water add the fried spices and cook the rice until 3/4done drain the water and set aside.
  • Heat oil in a thick-bottomed pan ,add the meat mixture fry for a minute. Then add rice over it sprinkle little fried onions then layer rice and onions 
  • Finally add chopped mint and corriander leaves and drizzle little saffron or red food color milk
  • Cover the dish with foil and  cover with heavy lid and cook on dum for 45-1hr on slow heat and serve hot.

    Vegetable Biryani

    Biryani was introduced in Indian via Mughal cuisine.Vegetable Biryani is an Indian rice dish bursting with flavor, delicious spiced vegetables and rice .Its not very easy to cook biryani, as firstly it do requires a lot of  attention and takes time to cook, but the final result is simply awesome and lip smacking.It is definitely a satisfying meal all by itself.Biryani is a flavored rice made with all vegetables and all the spices .It is not easy to make good biryani quicker  because it takes some time to cook but the final  result is delicious here i am with the receipe .... 

    INGREDIENTS U NEED:
    1.Vegetables-2cup(chopped)
    (preferably beans.carrot,potato,peas,double beans,cauliflower)
    2.Onion-2(thinly sliced)
    3.Tomato-1(chopped)
    4.Green chilli-6(thinly sliced)
    5.Rice-2cup
    6.Corriander leaves-to garnish
    7.Salt-as needed
    8.Seasoning-Mustard,Cumin,Cinnamon,Cloves
    9.Mint leaves-1/2cup
    10.Turmeric powder-1/4tbs
    11.Gingergarlic-2tbs
    12.Oil

    GRIND:
    Ginger-2inch
    Garlic-6

    UTENSIL:
    Big bottomed pan

    METHOD OF PREPARATION:
    • Heat oil in a deep bottomed pan,all the seasoning,add ginger garlic paste and saute it,then add onion,curry leaves and green chilli saute it untill translucent
    • Add chopped vegetables and let it cook for 5mins in a medium flame.
    • Then tomato,mint leaves and saute it for few mins,let it cook untill vegetables are tender.
    • Then add water,the ratio is (1:2)1cup of rice and 2cup of water , salt and turmeric powder,cover and cook it on the low flame untill it starts boiling .
    • Finally add rice and let it cook in the slow flame untill cooked and garnish with corriander leaves.

      Regular Chicken Biryani ~ MIL Version

      Biryani is one of the most popular dishes in tamilnadu .Biryani is generally made with  the meat or vegetables and rice which is cooked in the flavors of spices.Everybody loves biryani  i am one of them ,people make it different way but this is how my MIL makes it which is simple and easy ,one of my favorite indian main course dish,here goes the receipe....

      INGREDIENTS U NEED:
      1.Chicken-1/2kg
      2.Gingergarlic paste-2tbs
      3.Cinnamon-1stick
      4.Cloves-4nos
      5.Green chilli-5(cut it lenthwise)
      6.Onions-2(cut it thin lentghwise)
      7.Tomato-1(chopped)
      8.Turmeric powder-pinch
      9.Chilli powder-2tbs
      10.Salt-as needed
      11.Rice-3cup
      12.Corriander leaves-to garnish
      13.Mint leaves-to garnish
      14.Lime juice-1tbs
      15.Oil -6tbs

      UTENSIL:
      Big deep bottomed pan

      METHOD OF PREPARATION:
      • Heat little more oil in a pan ,add cinnamon,cloves,ginger garlic paste,green chilli fry it for few mins
      • Now add onion,turmeric powder fry untill they are soft and brown colour
      • Then add chicken,chilli powder and salt stir it untill chicken is half cooked
      • Add water let it boil now add washed rice (Ratio is 1cup rice:2cup water ),then reduce the flame to medium low and continue to cook for another 20 minutes,Let it sit for 10-15 minutes before opening it.
      • Then garnish with mint and corriander leaves and squeeze some lemon juice on top of the rice
      NOTE:
      For Chicken Biryani  use the raw meat and for Mutton Biryani use the precooked meat
