Tuscan veg soup ~ FoodNetwork

Hot vegetable soup is so easy to make and so good during winter . This soup brings nice flavor and is very nutritious.Try it out.....

INGREDIENTS U NEED:
1 (15-ounce) can low-sodium canellini beans, drained and rinsed
1 tablespoon Olive oil
1/2 large onion, diced (about 1 cup)
2 carrots, diced (about 1/2 cup)
2 stalks celery, diced, (about 1/2 cup)
1 small zucchini, diced (about 1 1/2 cups)
1 clove garlic, minced
1 tablespoon chopped fresh thyme leaves (or 1 teaspoon dried)
2 teaspoons chopped fresh sage leaves (or 1/2 teaspoon dried)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
32 ounces low-sodium chicken broth or vegetable broth
1 (14.5-ounce) can no salt added diced tomatoes
2 cups chopped baby spinach leaves
1/3 cup freshly grated Parmesan, optional

METHOD OF PREPARATION:
  • In a small bowl mash half of the beans with a masher or the back of a spoon, and set aside.
  • Heat the oil in a large soup pot over medium-high heat. Add the onion,carrots,celery, zucchini, garlic, thyme, sage, 1/2 teaspoon of salt and 1/4 teaspoon of pepper, and cook stirring occasionally until the vegetables are tender, about 5 minutes.
  • Add the broth and tomatoes with the juice and bring to a boil. Add the mashed and whole beans and the spinach leaves and cook until the spinach is wilted, about 3 minutes more.
  • Serve topped with Parmesan, if desired.

Potato Podimas(My spicyhut)

Yet another tried recipe turned out really very good side dish for my fried rice.....

INGREDIENTS U NEED:
1.Potato-2
2.Green chili-2(Optional)
3.Garlic cloves-4(Crushed)
4.Red chilli-5-6
5.Seasoning-Mustard,Urad dhal,Channa dhal,Curry leaves,Cumin
6.Turmeric powder-1/4tbs
7.Salt as needed
8.Oil

METHOD OF PREPARATION:
  • First peel off the potato ,wash it and cut it into very thin stlices.
  • Now Heat oil in a pan,add crushed garlic and saute it, and add broken red chilli,cumin, mustard,urad,channa dhal and fry untill it pops up and keep it in the medium flame.
  • Then add turmeric powder,salt and sliced potato and keep frying it untill it becomes soft and well cooked.

Channa rice (vidhas-jg.blogspot)

Another tried rice recipe came out excellento......

INGREDIENTS U NEED:
1.Rice - 1cup
2.Channa -1 cup
3.Onion - 1
4.Tomato - 1
5.Coconut - 2 tbsp
6.Garlic - 2 to 3 pods
7.Red chili - 1
8.Salt to taste
9.Garam masala - 1/2 tsp
10.Oil
11..Cumin seeds for tempering

METHOD OF PREPARATION:
  • Soak the Channa for 8 hours and pressure cook it. ( I will cook the Channa and keep stock for 1one week)
  • Cook the rice and let it cool.
  • Combine coconut, garlic, red chili and ground it to a paste.
  • Heat oil in a kadai and splutter cumin seeds.
  • Add chopped onions, saute till it turns pink. Add chopped tomatoes and cook it well.
  • Add the paste, salt , garam masala and cook until the raw smell goes.
  • Add the cooked rice and mix well. Garnish with cilantro.

Veg hot dog (Cooking for all season)

Tried from other blog and my kids just loved them so much.Try it.....

INGREDIENTS U NEED:

For patties:
1.Potatoes - 2 medium
2.Peas - 1 cup
3.Carrot - 2 medium
4.Maida - 1/2 cup
5.Chili powder - 1 tsp
6.Salt to taste
7.Cheese - as required
8.Coriander Leaves a little
9.Oil for frying

For coating:
1.Corn flour - 1/2 cup
2.Bread Crumbs - for coating

For Hot Dog:
1.Long buns - 8
2.Cheese - for garnishing
3.Tomato Sauce as required
4.Pepper powder as required

METHOD OF PREPARATION:
  • If you are using dried peas, then soak in water for 6 hrs min and cook to get soft ones. Carrot, potatoes can be boiled along with peas.
  • Mix corn flour in water to get a dropping consistency. Get bread crumbs ready.
  • Mix all the ingredients for patties Roll then as long patties and dip in corn flour, then in bread crumbs.
  • This can be either deep fried or shallow fried. I did a shallow fry as its better tasting.
  • Heat oil in a pan and place the long patties and add 1 tbsp to fry each patties.
  • Once all the patties are ready, make a long slit on one side of the bun making sure its still intact.
  • Apply sauce, grated cheese, then place the patties inside. Sprinkle generous amount of cheese if you like cheese on top of the patties.
  • Bake it in oven or microwave until the cheese melts. Finally you can sprinkle pepper and sauce over the top before serving.
  • Your hot and cheesy Veg Hot Dog is ready. Enjoy!

Tilapia fish fry ~ Sonali

Tilapia fish fry is a very simple and tasty side dish made with basic ingredients.Definetely Try it ....  

INGREDIENTS U NEED:
1.Tilapia fillets-4
2.Fresh lime juice-1/2cup
3.Ginger garlic  paste-2tbs
4.Red chili powder-1tbs
5.Cilantro leaves-1/2cup(Finely chopped)
6.Black pepper powder-1/2tbs
7.Egg-1(Beaten well)
8.Bread crumbs-1cup
9.Salt ad needed
10.Oil for shallow fry

METHOD OF PREPARATION:
  • Marinate the cleaned fish with red chilli powder,pepper powder,chopped cilantro,salt,lime juice,gg paste for 3-4hrs or overnight.
  • Now coat the marinated tilapia fillets first with the beaten egg and then coat with bread crumbs.
  • Heat oil in a large skillet over medium heat, Fry the coated tilapia fillet in a single layer turning carefully after about 3 to 4 minutes. Cook for about 3 to 4 minutes longer or until cooked through and lightly browned.

    Sambar or Rasam rice

Fruit Custard

Fruit custard is an easy to make recipe and tastes good after any meal.This is one of my favorite and also this is a very tasty and kid friendly dessert.Here is how to make it.......

INGREDIENTS U NEED:

1.Milk-4cups
2.Sugar-1cup
3.Fruits-Preferebly Apple1,Bananas2,Strawberries6(Chopped into medium pieces)
(or Any fruits)
4.Custard powder-4tbs(Plain flavor)

METHOD OF PREPARATION:
  • Boil the milk in a deep pan until little thick for about approximately15-20mins in the medium flame.
  • In another bowl, mix 4 tblsn of custard powder without any lumps with 5tbs of milk.
  • Now Add the mixed custard milk to the boiling milk,Stir it for few minutes till the rawness of the custard goes off and Let it cool.
  • Now pour the custard into a bowl and refrigerate it for 3-4hrs.
  • Before serving add the chopped fruits of your choice to the custard and mix well and serve.

GOES WELL WITH:
     Topped with any ice cream

Milagai Bajji

Milagai bajji is also called as Chili bajji.This bajji can be served with sweet chutney like tamarind or tomato ketchup.The recipe of the chili bajji is as follows....

INGREDIENTS U NEED:
1.Green chilli-6-8(Preferred big size moderately hot)
2.Besan flour-2cup
3.Rice flour-4tbs
4.Asafoetida-Pinch
5.Roasted Cumin powder-1/2tbs
6.Red chili powder-1tbs
7.Red color-Pinch
8.Baking soda-Pinch
9.Salt as needed
10.Oil for deep fry

METHOD OF PREPARATION:
  • First cut the green chili into two pieces and sprinkle cumin powder and salt and mix well and set aside.
  • For the batter In a bowl,mix gram flour,rice flour,hing,chili powder,soda,color,salt with water to make a loose paste and keep aside.
  • Now Heat oil in a deep frying pan. When the oil is hot enough, dip each green chili in the bajji batter, and put it in oil immediately. Deep fry till golden brown. Serve hot with your favorite chutneys or tomato sauce. Enjoy!

       Any chutney or Tomato ketchup

Oats Kanji

Oats Kanji is my everyday breakfast and its perfect to kick start a day which is very healthy.I always like to have it with pickle or cooked vegetables or sundal.Coming to the recipe.....

INGREDIENTS U NEED:
1.Oats -1cup
2.Water-4cup
3.Milk-1cup
4.Salt as needed

METHOD OF PREPARATION:
  • In a deep bottomed pan add the oats and water and let it cook  for about 5-10mins until mushy.
  • Now add boiled milk and switch off the stove and then add enough salt and mix well.
  • Can be served both warm or cold.Enjoy!

Mint Corriander Chutney ~ MIL version

Mint with Coriander chutney is a very healthy side dish.This basic chutney is perfect for dipping sauce or dishes like biryani etc. Lets come to the recipe...

INGREDIENTS U NEED:
1.Mint leaves-1bunch(Cleaned and remove the leaves)
2.Coriander leaves-1bunch(Cleaned and remove the leaves)
3.Green chili-4-5no
4.Garlic-4cloves(Remove the skin)
5.Coriander seeds -2tbs
6.Cumin-3tbs
7.Tamarind pulp-1/2cup
8.Salt as needed
9.Oil

METHOD OF PREPARATION:
  • In a medium hot pan fry cumin,coriander seeds for about 2-3mins and keep is aside.
  • In the same pan add 1tbs of oil,garlic,green chili and fry it for few mins and set it aside.
  • Now in the same pan ,add 1tbs of oil,add washed mint and coriander leaves and fry it 3-4mins and  keep it aside.
  • Then grind all the fried ingredients together with enough salt ,tamarind pulp( without adding water) into smooth paste in a blender.
  • Finally do the seasoning with mustard and add it to the grinded chutney and serve.
Note:
This chutney stays good for atleast a month if stored in the Fridge.

Karamani Kuzhambu(Indianvegetarian Kitchen)

I tried it today and came out pretty good. We had it with rice and apalam.Try it.....

INGREDIENTS U NEED:
1.Karamani(black eye peas) - 3/4 cup
2.Tamarind - small lime sized
3.Oil - 3 tsp
4.Mustard seeds - 1 tsp
5.Curry leaves - a few sprigs
6.Cumin seeds - 1 tsp
7.Fenugreek seeds - 1 tsp
8.Garlic flakes - 4
9.Small onions - 6
10.Tomatoes - 3/4 cup
11.Turmeric powder - 1/2 tsp
12.Chilli powder - according to your taste
13.Salt as needed
14.Coriander powder - 2 tsp
15.Coconut - 1/2 cup

METHOD OF PREPARATION:
  • Soak Karamani for 4 hours and pressure cook it till soft.
  • Extract juice from tamarind.
  • Heat oil in a pan. Add mustards seeds, cumin, fenugreek seeds and garlic flakes.
  • Add onions and fry well. Add tomatoes and cook till it gets mashed.
  • Pour the tamarind extract, add turmeric powder, chilli powder and coriander powder. Let the kuzhambu simmer for 15 minutes.
  • Grind coconut to a fine paste with water and add this to the kuzhambu. Add cooked karamani. Let it simmer for some more minutes.

Vegetable Hakka Noodles ~ Chings secret

Tried Hakka noodles from Chings secret came out really good.Try it........ 

INGREDIENTS U NEED:
1.Hakka Noodles-1package
2.Onion-1(Finely Sliced)
3.Green pepper-1(Finely Sliced)
4.Carrot-1(Finely Sliced)
5.Beans-1/2cup(Chopped)
6.Cabbage-1/2(Shredded)
7.Chings All in one sauce-3tbs
8.Schezwan sauce-1tbs
9.Tomato ketchup-1tbs
10.Soy sauce- 1tbs
11.Chili vinegar- 1tbs
12.Salt as needed
13.Pepper powder-Pinch
14.Oil

METHOD OF PREPARATION:
  • First cook the noodles as per the package and set it aside.
  • Heat oil in a pan,the pan should be really hot,now add onion,pepper,carrot,beans and stir fry it and  finally add cabbage and mix well.
  • Then add chings sauce, schezwan sauce,ketchup,soy sauce,salt,pepper powder and chili vinegar and stir it.
  • Then finally add cooked noodles and mix it well and serve hot.

Homemade Grape Juice

Homemade grape juice made using fresh sweet purple grape is the best ,fun and relatively easy to make.Use any grape color combination . Here is how to do...

INGREDIENTS U NEED:
1.Purple grapes-2cups
2.Water-1/2cup
3.Sugar as needed
4.Ice cubes as needed

METHOD OF PREPARATION:
  • First Fill the jar of your blender with 3/4 of the way with grapes,sugar and add a splash of water. Blend on high at least few min. 
  • Now Strain through a fine-mesh sieve or strainer over a large bowl, pressing down on the solids in the strainer with a large spoon to extract every last bit of juice.
  • Serve chilled with ice cubes.

Chicken Meatballs (Sailusfood)

Tried recipe from sailus food.......

INGREDIENTS U NEED:
1/2 kg boneless chicken pieces, cleaned and washed
1/4 kg onions finely sliced
8-10 fresh green chillis
5-6 dry red chillis (adjust according to your choice)
15-20 garlic flakes
3″ piece ginger chopped
small bunch coriander leaves, chopped
4 tbsps coriander seeds
1 1/2 tbsps cumin seeds
2″ cinnamon stick
3 green cardamoms
5-6 cloves
20 cashewnuts
salt to taste
oil for deep frying

METHOD OF PREPARATION:
  • Heat a tbsp of oil in cooking vessel. Add the cumin seeds, coriander seeds, cardamom, cloves, cinnamom, red chillis and cashewnuts and stir for a minute till a nice aroma emanates the whole kitchen. Be careful not to burn the spices. Cool.
  • First grind the roasted ingredients along with ginger, garlic and green chillis to a coarse paste. Next add the chopped raw onions, coriander leaves, chicken and salt and grind further to form a smooth paste like shown in the picture above.
  • Add a tbsp of oil to the ground mixture and mix thoroughly before shaping into small lemon sized balls.
  • Heat oil for deep frying. Once its piping hot, reduce flame to medium and place these balls in the oil and fry them to a crisp, golden brown color.
  • Serve hot with tomato sauce or green chutney. 

NOTE:
The green and red chillis can be adjusted according to your spice level. The chicken balls can also be grilled for a more healthy version.

Carrot Halwa(Paajaka)

Carrot halwa is one of my favorite sweet dish which i tried from another blog.Here is the recipe.....

INGREDIENTS U NEED:
1.Grated carrots-3cups
2.Milk-11/2cups
3.Sugar-1cup
4.Ghee-3tbs
5.Cardamom Powder-1/2tbs
6.Saffron strands-Pinch
7.Cashewnuts-2tbs(Chopped)

METHOD OF PREPARATION:
  • In a nonstick pressure cooker,fry the grated carrots in a tablespoon of ghee for one min.
  • Then add the milk and saffron and pressure cook for one whistle.
  • Now To this add sugar and keep stirring in a medium heat.When complete moisture is absorbed,add half of the ghee,fry for 2 more mins and remove from heat.
  • Fry the cashews in the remanining ghee and add it to the halwa with the cardamom powder and mix well.
  • Serve warm or at room temperature or cold.

Mughlai Egg Biryani(Andhra ruchulu)

Yet another tried recipe......

INGREDIENTS U NEED:
1.Boiled eggs-4
2.Basmati rice or jasmine rice-2 1/2 cups
3.Finely chopped onion-1
4.Chopped mint-1 table spoon
5.Chopped cilantro -1 table spoon
6.Fresh yogurt/curd-1/2 cup
7.Finely chopped green chilis-2 teaspoons
8.Ginger garlic paste-1/2 teaspoon
9.Whole garam masala-10 no
10.Biryani masala-1/2 teaspoon

For egg masala:
1.Dhaniya powder-1/2 teaspoon
2.Red chili powder-1/2 teaspoon
3.Turmeric-1 pinch
4.Amchoor/dry mango powder-1/2 teaspoon
5.Subji masala powder-1/4 th teaspoon(optional)
6.Besan powder/chikpea flour/chenagapindi-2 teaspoons

METHOD OF PREPARATION:
  • Heat 1 table spoon of oil in a kadai.
  • Mix all the masala's add some water,and make it like a paste.
  • Make some scars on eggs with knife on all sides,it helps to absorb the masala flavour.
  • Now Dip the eggs in masal paste and fry in kadai,once it roasted keep a side.
  • Soak the rice in water for 40 minutes.
  • Now take deep bottomed vessel,add butter to it,when it heats up add the whole garam masala(1 clove,4 pepper corns,2 cinnamon/dalchini,2 cardamom/ilaichi)
  • When the aroma comes out add the chopped onions,saute until it turns to nice brown colour.
  • Now add the green chilis,ginger garlic paste,fry well.And add mint(pudina), and cilantro(kothimeera) and the salt.
  • Now add the curd,cook for 5 to 6 minutes.Now add the water and rice ,cook until the bubbles starts,Now at this stage add the roasted eggs mix well,cook on low flame or until done.
  • Serve hot with gravy,and raitha and salad onions with lemon.

Orange Juice

Take medicine(tablets) followed by drinking orange juice.Lets go ....

1.Juice Orange - 2
2.Sugar as needed
3.Ice cubes as needed

METHOD OF PREPARATION:
  • First cut the oranges into half.
  • Now squeeze them with the electric or hand juicer untill all juice is drained out .
  • Then strain the juice completely using strainer in the glass by adding little water and sugar mix it well.
  • Finally add ice cubes and serve cold. 

Mutton Fry

Mutton fry is a spicy mouth watering dish made with pepper and other spices by pressure cooking process where the mutton really becomes tender and juicy.This dish will make a perfect companion to different dishes like fried rice,chapathi and even sambar and rasam rice. Here is how i cook it.....

INGREDIENTS U NEED:
1.Mutton-2lbs
2.Onion-1(Finely Chopped )
3.Gingergarlic paste-2tbs
4.Homemade Pepper powder-3tbs
5.Chilli powder-1tbs
6.Turmeric powder-1/4tbs
7.Fennel seeds/saunf-1tbs
8.Seasoning-Cinnamon,Cloves,Curry leaves
9.Salt as needed
10.Corriander leaves-To garnish
11.Oil

METHOD OF PREPARATION:
  • First pressure cook the cleaned meat with salt,chilli powder,gingergarlic paste,turmeric powder and saunf with little water for 4-5whistle ,after that remove from heat and keep it aside.
  • Now heat oil in a pan,add cinnamon,cloves let it splutter and add onions,Curry leaves fry untill it becomes translucent.
  • Then add the pressure cooked meat with pepper powder and stir it well,let it boil untill it becomes thick and dry and remove from heat .
  • Garnish with corriander leaves.
