Eggplant Sutadhu ~ Nimi

I was never a fan of brinjals/egg plant/ baingan until i got married, because at my moms home she never makes any curry with brinjal because she don't like that vegetable, so after i got married my MIL makes so many dishes with this vegetable, i started liking it so much and now i make it all the time but this receipe is from my frind nimi.This dish very easy and simple to make with few ingredients.

INGREDIENTS U NEED:
 1.Kathrikai/Brinjal- 1big
2.Onions- 1(Finely chopped)
3.Green chilly - 3(Finely chopped)
4.Seasoning-Mustard ,Cumin,Urad dhal

UTENSIL:
Wide pan

METHOD OF PREPARATION:
  • First apply oil on top of the brinjal and put it in the oven or gas untill the skin becomes black and let it cool down 
  • Then mash it coarsly  using spoon or hands and keep it aside
  • Now heat oil in a pan,add seasoning let it splutter,now add onions and green chilly  fry it untill light brown
  • At this stage add mashed kathrikai for few mins and cook it well untill it becomes thick and desired  consistency.
GOES WELL WITH:
    Plain rice
