Vegetable Sambar

Sambar is a very popular South Indian dish that is primarily made with toor dal and tamarind pulp and sambar powder.The preferred dish in South India cuisine consisting of dal and vegetables such as, brinjal, drum-stick, bitter gourd , ladies finger etc.Depending on the vegetables u use the flavor changes.I make this sambar so often made on a daily basis and the vegetables rotated for some variation.This is how i make sambar so Enjoy!!!

INGREDIENTS U NEED:
1.Toor dhal-1cup
2.Onions-1(chopped)
3.Tomato-1(chopped)
4.Vegetable-2cup(chopped)
(Preferably drumsticks,beans,carrot,avarakai,turnip,raddish etc)
5.Chilli powder-1tbs
6.Corriander powder-1tbs
7.Turmeric powder-pinch
8.Oil
9.Seasoning-1tbs(mutard,cumin,urad dhal,asafoetida)curry leaves
10.Tamarind extract-1/2cup
11.Salt-as needed

UTENSIL:
Deep bottomed pan

METHOD OF PREPARATION:
  • First pressure cook the dhal with a pinch of turmeric powder for 3-5whistle and let it cool down and mash it with a masher
  • Heat oil in a pan, add mustard seeds,cumin seeds,curry leaves,asafoedia let it splutter,then add onions fry nicely untill brown
  • Then add tomatoes,salt,chilli powder,corriander powder and let it cook for few mins
  • Then add vegetables let it cook untill they are well done
  • Finally add tamarind pulp water and cook it for 5mins and garnish with corriander leaves
GOES WELL WITH:
      Plain rice
