Vazhakai Poriyal ~ Latha aunty

My aunts version of Vazhakai poriyal....Try and enjoy it....

INGREDIENTS U NEED:
1.Vazhakai/raw banana -  2 (Slightly peel the skin and cut into medium thin round slices)
2.Garlic - 2cloves
3.Cinnamon - Small piece
4.Cloves - 2
5.Turmeric powder - 1/4tbs
6.Chilli powder - 1tbs
7.Seasoning- Mustard,Curry leaves
8.Salt as needed
9.Oil -5tbs

METHOD OF PREPARATION:
  • Initially crush the garlic,cinnamon and cloves together using mortar and pestle and keep it aside. 
  • Now Heat little more than usual oil in a non-stick pan,add the seasoning one after another, and then add the crushed garlic and fry it for a min in the medium flame.
  • Now add sliced vazhakai and stir it for few mins and then add chilli powder,turmeric powder and enough salt and keep mixing untill the powder is well coated on all the slices in the high flame.
  • Cook untill the raw banana slices are nice and tender and serve it. 

GOES WELL WITH:
       Sambar rice or Rasam rice

Plain and Simple Fried rice ~ Garima

Got this simple tasty rice dish with one of my friend....

INGREDIENTS U NEED:
1.Basmati rice - 2 cup
2.French cut beans - 1/2cup (fresh or frozen)
3.Peas - 1/2cup (fresh or frozen)
4.Cashewnuts - 2tbs
5.Raisins -1 tbs(optional)
6.Cumin seeds - 1tbs
7.Curry leaves - 2stgs
8.Mustard seeds - 1/2tbs
9.Salt to taste
10.Oil - 2tbs
 
METHOD OF PREPARATION:
  • Heat oil in a pan,add mustard seeds once its starts to crackle add cumin seeds,curryleaves,raisins and cashewnuts fry it for few mins.
  • Now add peas,french cut beans and enough salt and saute it for few mins or untill slightly cooked.
  • Then add rice and 4cups of water and give it a stir and put it in the electric cooker or just leave it in the stove top.
  • Once its done Finally garnish with corriander leaves and serve. 


 GOES WELL WITH:

Tomato Thokku (Yourstastefully)

Yummy yummy Tomato Thokku tried from Yourstatefully blog........

INGREDIENTS U NEED:
1.Tomatoes- 2 kg
2.Chilli Powder - 6tbs
3.Mustard seeds - 1tbs
4.Methi seeds - 1/2tbs
5.Hing - 1/4tbs
6.Black salt - 1tbs
7.Salt to taste
8.Tamarind Pulp - Small size(Optional)
9.Curry Leaves - 2stgs

For tempering:
Gingelly oil - 3/4cup
Mustard seeds - 2tbs
Garlic pods - 6-8 

METHOD OF PREPARATION:
  • Wash and chop tomatoes into big pieces.
  • Heat a big deep nonstick pan,add chopped tomatoes cover and let it cook,occasionally give it a stir and keep mashing them.
  • Meanwhile, heat a kadhai and toast the mustard seeds on low flame, Once they crackle, transfer on to a plate. In the same pan, roast the methi seeds and add it with the mustard seeds. Cool and powder the seeds called Pickle Powder.
  • The tomatoes will be soft and mushy by now. Keep stirring so that they do not stick to the pan and Allow the tomatoes to cook in the water that it releases and do not add water extra at any point of time.
  • All the moisture from the tomatoes should completely evaporate,now add tamarind pulp,salt,chilli and turmeric powder,mix well and let it cook,keep stirring now its almost dry.
  • Now heat gingelly oil in a pan,whan its hot add 2tbs of mustard seeds,after it crackles add garlic,curry leaves and asafoetida.  
  • Pour this hot oil mixture into tomato mix and give it a good stir and add 2tbs of pickle powder and stir well and fry it untill the oil comes up.
  • Finally turn off the heat and allow the thokku to cool completely before u transfer it to the container. 

GOES WELL WITH:
      Curd Rice

Butter Capsicum Paneer Curry (Homecookrecipes)

This is yet another tried dish and the kids loved it so much...

INGREDIENTS U NEED:
1. Paneer Cubes -1 cup
2.Capsicum- 1/2
3.Onions-2
4.Tomatoes-3
5.Corriander Leaves- 1 cup
6.Chilly powder
7.Butter- 1/4 cup
8.Salt to taste
 
METHOD OF PREPARATION:Cut the paneer into cubes and roast it in a Tava, without oil. roast it on both the sides. keep it aside.
  • Now have 4 spoons of oil and fry the onions and tomatoes and corriander leaves. fry it well. let them cool and grind it into a paste.
  • Now have oil in kadai and fry the capsicum cutted in cube shapes.
  • After frying it, add fried paneer,the grinded paste, chilly powder, Turmeric powder a pinch and salt. Mix well and let them boil for 3 minutes.
  • Now add the butter and close it with a lid and let it done for 5 minutes. now it is ready to serve.

      Naan or Chapathi

Moongdhal Pakodas

Moong dhal pakodas made with split green gram dhal.This is a spicy, delicious, healthy ,easy snack which is crispy outside and soft inside.Here is how i make it...

INGREDIENTS U NEED:
1.Split moond dal - 2cups
2.Onion - 2(Chopped finely)
3.Green chilli - 5-6(Chopped finely)
4.Corriander leaves - 1cup(Finely chopped)
5.Salt to taste
6.Oil to deep fry

METHOD OF PREPARATION:
  • Wash and soak the dhal in water for about 2hrs or longer.
  • Grind the dhal coarsly without adding water or using very very little water.
  • Now add all the chopped ingredients,enough salt to the batter and mix well.
  • Then in a frying pan add oil for deep frying and keep it on medium high heat and drop the batter like pakodas into the oil,fry the vadas in small batches and fry untill golden brown all around.
  • Now its ready!!!Serve them with any Chutney as an appetizer. 

 
GOES WELL WITH:
      Sambar rice or Rasam rice

Tomato Charu ~Tomato Sunitha

Got this tasty recipe from one of my friend....

INGREDIENTS U NEED:
1.Tamarind - Lemon sized ball
2.Tomato - 1medium
3.Onion - 1medium
4.Green chilli - 2
5.Gingergarlic paste - 1tbs
6.Red chilli - 3
7.Turmeric powder - 1/4tbs
8.Seasoning - Mustard,Urad,Asafoetida,Curry leaves
9.Corriander leaves - to garnish
10.Salt to taste
11.Oil

GRIND COARSLY :
Corriander seeds-1/2tbs
Cumin seeds-1tbs
Garlic-4cloves
Pepper-1/2tbs
Red chilli-2
Grind coarsly into powder using blender without adding water.

METHOD OF PREPARATION:
  • Wash the tomatoes and microwave along with tamarind,turmeric powder,red chilli and a cup of water on high for 10mins.
  • Once its cool down grind it into smooth mixture using blender and keep it aside.
  • Now in a pan heat oil,add seasoning once its starts spluttering add onion,green chilli,GG paste,red chilli and saute it for few mins. 
  • Then add the grinded tamarind mixture,ground powder,turmeric,salt and let it come to vigorous boil and this takes around 10-15mins and turn off the heat.
  • Finally garnish with corriander leaves and serve hot.

     Steam hot white rice

Nipattu (Kannada cuisine)

Tried recipe and the end result was excellent...
 
INGREDIENTS U NEED:
1.Rice flour 1 cup
2.Roasted channa dal 1/2 cup
3.Maida 1 tbsp
4.Peanut 1/2 cup
5.Chilly powder 1 tbsp
6.Salt to taste
7.Curry leaves 10
8.Hing 1 pinch
9.Oil 2 tbsp + to deep fry.

METHOD OF PREPARATION:
  • Powder the roasted channa dal and half the peanuts into a smooth powder. Crush the remaining peanuts coarsely.
  • Mix the powdered dal and nut mixture, crushed peanut, salt, chilly powder, curry leaves, Hing and rice flour.
  • Heat oil in a stable thick bottomed pot.
  • Make a well in the rice flour mixture and pour two tbsp of hot oil into the well. Mix with a spoon. Add some water to make a tight dough.
  • Pinch small balls out of the dough. Roll it out into 3" rounds
  • Slide the dough rounds gently into hot oil. Fry till golden brown. Turn over and fry till the other side is done.
  • Remove from oil, drain it on a paper towel and store it in an air tight jar. It will stay good for at least a week.

    Kids Egg Sandwich

    Super quick,simple egg sandwich are delicious and nutritious!!! and even kids can make it too.Easily customizable to your own taste like add fried onions and peppers,cheese,ketchup etc .Here is quick and easy one....

    INGREDIENTS U NEED:
    1.Wholewheat Bread - 2slices
    2.Egg - 1
    3.Pepper powder - 1/4tbs
    4.Salt to taste
    5.Butter - 2tbs

    METHOD OF PREPARATION:
    • In a bowl crack the egg,add salt, pepper powder then beat well and make like a usual omellette.
    • Now Toast the bread slices in tawa or using toaster and apply some butter on both slices of bread. 
    • Then on one slice of bread add the omellette and Top with another slice of bread cut into diagonally half if desired before serving..Enjoy!!!!

    Spicy Potato Curry for Rice (Homecook Recipes)

    Here is the another followed Recipe came out excellent.....

    INGREDIENTS U NEED:
    1.Potatoes - 2 (peel the skin)
    2.Red onion -1 medium size  (Chopped finely)
    3.Tomatoes - 2(Chopped very finely)
    4.Tamarind - a small lemon size
    5.Dry Red chilis - 3
    6.Curry leaves - 8
    7.Garlic - 3
    8.Mustard  - 1/2 spoon
    9.Fenugreek - 5 seeds
    10.Asafoetida powder - 1/4 spoon
    11.Butter - 2 spoons
    12.Oil - 4tbsp's

    List of Powder's:
    1.Turmeric Powder-a pinch
    2.Chilly Powder-1 tbsp
    3.Coriander Powder-2 tbsp
    4.Cumin Powder-1/2 tsp
    5.Curry Leaves Powder- 2 tsp (Optional)
    6.Pepper Powder-1/2 tsp

    METHOD OF PREPARATION:
    • In a thick Bottomed Pan, heat 4tbsps of oil.Add mustard,when it cracks add fenugreek seeds, curry leaves, garlic and red chili fry them well.
    • Now add Finely Chopped onions, saute them till they turn translucent and add finely chopped tomatoes, saute the tomatoes along with onions, till they mix up along. You got to saute for atleast 3-4 minutes, till they mix up.
    • Now add Salt to taste and all the Powders mentioned in the order, fry them well for 2mins or till the oil comes out seperately.
    • Now add cubically chopped potatoes and mix them well with all the masala.
    • Add 1/2 a cup of Tamarind water and close the kadai with a lid,slower the flame,let the potatoes get half-cooked,After10 minutes open the lid, add the butter and close the lid.
    • After 5 minutes,the potatoes would have cooked and the spicy potato curry is ready.

    GOES WELL WITH:
       Plain white rice

    Spinach/Keerai Sambar (Pressure cooker Method) ~ Anu

    Got this easy and delicious recipe from one of my friend which can be done within 15mins or so.Lets see how to make it....

    INGREDIENTS U NEED:
    1.Spinach - 1bunch(Chopped)
    2.Toor dhal - 1cup(Washed)
    3.Onion -1(Chopped)
    4.Tomato - 1(Chopped)
    5.Green chilli - 3
    6.Turmeric powder - 1/4tbs
    7.Seasoning - Mustard,Cumin seeds,Urad dhal,Curry leaves
    8.Salt to taste
    9.Oil

    METHOD OF PREPARATION:
    • In a Pressure cooker add 2tbs of oil and season with mustard,cumin,urad,curry leaves, Once they start spluttering, add the green chilli and onion saute it for few mins.
    • Now add tomato to this and fry for few mins,then add toor dhal,turmeric powder,salt,chopped spinach,little water mix well and close the lid and pressure cook untill soft or 3-4whistle.
    • Once cool down mash it coarsly or just leave it.Now its done!!Serve hot with rice and ghee!! 

    GOES WELL WITH:
          White rice

    Crispy Potato Roast ~ Ramya

    Potato roast is a simple side dish tastes very well with curd rice.Got this recipe from one of my Friend.Now coming to the recipe....

    INGREDIENTS U NEED:
    1.Potato -3Medium (Cut into small cubes)
    2.Turmeric powder - 1/2tbs
    3.Chili powder - 2tbs
    4.Corriander powder - 1tbs
    5.Besan flour - 3tbs
    6.Seasoning - Mustard,Cumin,Channa dhal,Urad dhal
    7.Salt to taste
    8.Oil little more

    METHOD OF PREPARATION:
    • Heat oil in a pan and add the seasoning one after another,when they pop,add the chopped potatos and saute untill lightly browned.
    • Now add the chilli powder,corriander powder,turmeric powder and salt fry for a min and mix well and cook untill the potatoes are well cooked and soft.
    • Finally add the besan flour and make sure you mix every 2-3 mins to distribute the heat(low flame) and avoid the potatoes from burning from the bottom and fry untill brown and crispy.

    Freshly Grated Coconut Rice

    Coconut rice is a very famous Indian recipe which is normally made on the festival days but i make it all the time.Check this one with the freshly grated coconut which makes difference and tastes much better than frozen coconut....

    INGREDIENTS U NEED:
    1.Basmati rice - 2cups(Cooked)
    2.Freshly grated coconut - 2cups
    3.Onion - 1(Finely Chopped)
    4.Green chilli - 3or 4(Slit)
    5.Peanuts - 1/2cup(Optional)
    6.Seasoning - Mustard,Channa dhal,Urad dhal,Asafoetida,Curry leaves
    7.Salt to taste
    8.Oil

    METHOD OF PREPARATION:
    • In a wide bowl spread the cooked basmati rice and allow it to cool and keep it aside.
    • Heat oil in a pan,add the seasoning one by one and add peanuts fry and allow them to turn red.
    • Now add the green chilli,onion and roast them for few mins.
    • Finally add grated coconut combine and saute for 5mins on low flame or untill light brown and turn off the heat. 
    • Then add this seasoning to the cooked rice and combine well and serve hot with any of ur choice.

    Bittergourd/Pavakkai Thokku

    Bittergourd or Pavakkai thokku is quick and easy side dish and goes well with rice.Try this spicy thokku and u will love it......  

    INGREDIENTS U NEED:
    1.Bittergourd- 5medium size(Cut into thin slices and remove the seeds)
    2.Onion-2(Finely chopped)
    3.Tomato-1(Finely chopped)
    4.Garlic-10pods(Remove the skin)
    5.Tamarind-1lemon size
    6.Tamarind pulp-1Cup
    7.Chilli powder-3tbs
    8.Turmeric powder
    9.Jaggery-5tbs
    10.Salt to taste
    11.Seasoning-Mustard,Curry leaves
    12.Oil-8tbs

    METHOD OF PREPARATION:
    • First boil the chopped pavakkai with tamarind with little water until cooked and strain the water and remove the tamarind and keep it aside.
    • Now heat little more oil in a pan,add mustard,curry leaves,garlic and onion saute it untill brown.Then add tomato and fry it well and add cooked Pavakai,chilli powder,salt,turmeric powder and tamarind pulp water and cook it untill thick.
    • Finally add jaggery and mix it well and let it cook for 5-10 mins in the low flame or untill the oil comes up and now its ready to serve.

     GOES WELL WITH:
            Plain rice

    Chow chow Pepper Kootu (Kamalas Corner)

    Tried recipe from another blog........

    INGREDIENTS:
    Chow Chow – 1 No
    Green Gram Dhal – ¼ cup
    Turmeric powder – a pinch
    Salt – ½ teaspoon or as per taste

    To fry:
    Red Chilli – 2 Nos
    Black Pepper – 1 teaspoon
    Jeera – ½ teaspoon
    Urad Dhal – 2 teaspoon
    Coconut gratings – 2 tablespoon
    Oil - 1 teaspoon

    For seasoning:
    Oil – 1 teaspoon
    Mustard – ½ teaspoon
    Urad Dhal – 1 teaspoon
    Curry leaves – few
    Sambar Onion - 2 Nos

    METHOD OF PREPARATION:
    • Cook Green gram dhal along with a pinch of turmeric powder in open vessel till soft.
    • Remove the skin from chow chow and cut into small pieces. Add these pieces to the dhal along with turmeric powder and salt. Cover with lid and cook on medium flame till soft.
    • Meantime, in a kadai put a teaspoon of oil and fry red chillies, urad dhal, pepper, jeera for one to two seconds and finally add the coconut gratings and fry for one more second. Remove and cool it. Grind it to a fine paste.
    • When the vegetable is cooked well, add the ground paste along with little water and mix well. Allow to boil for few minutes on low heat.
    • Season it with mustard, urad dhal, curry leaves and chopped onion.
    Tips: You can prepare the above Kootu with Bottle gourd also.

    Egg fry ~ Kulamma

    Egg fry is an quick,very simple and easy indian food recipe which is prepared with boiled eggs and spices.Lets see how to make it.....

    INGREDIENTS U NEED:
    1.Egg - 4(Boiled)
    2.Onion-2(Sliced)
    3.Tomato-1(Sliced)
    4.Ginger,garlic,cinnamon,cloves,saunf paste-2tbs
    5.Pepper powder-2tbs
    6.Turmeric powder-1/4tbs
    7.Seasoning-Mustard,Curryleaves
    8.Salt to taste
    9.Oil-2tbs

    METHOD OF PREPARATION:
    • First Peel and quarter 4 boiled eggs. 
    • Heat oil in a vessel, add Mustard, few curry leaves and sliced onions and saute for 5mins.
    • Now add the grinded paste and fry it for few mins and add tomatoes,turmeric powder and salt to taste cook untill oil comes up.
    • Then place the quartered boiled eggs and combine carefully.Cook on low flame for 4mins.
    • Finally add Pepper powder combine again and cook for another min and turn off the heat and garnish with chopped corriander leaves.

    GOES WELL WITH:
            Biryani
