INGREDIENTS U NEED:
1.Drumstick/Murungakai-2(cut into medium pieces)
2.Kathrikai/Brinjal-2(cut into medium pieces)
3.Onions-1-(chopped finely)
4.Tomato-1(chopped finely)
5.Garlic-4cloves(crushed)
6.Chilli powder-1tbs
7.Coriander powder-1tbs
8.Turmeric powder-a pinch
9.Salt - as per taste
10.Oil - 2tbs
11.Corriander leaves-To garnish
12.Curry leaves - To garnish
13.Seasoning-1tbs(mustard,urad dhal,cumin)
14.Tamarind extract-1cup
UTENSIL:
Deep bottomed pan
METHOD OF PREPARATION:
- In a pan add the oil,add all the items from seasoning, when its splutter add onions let it fry untill it is translucent.
- add the tomatos fry it untill it becomes like a paste
- Now add drumstick and kathrikai and let it fry for few mins
- Add salt, chilli powder,corriander powder,turmeric powder and crushed garlic and let it cook for 10mins or fry it untill the oil seperates from it.
- Finally add the tamarind extract and some water to it and allow it to boil for 5-7 mnts/until the vegetables cooked completely and garnish with corriander leaves.
