Drumstick with Brinjal Curry

Drumstick This curry is nothing but a kind of stew made with vegetables and Tamarind juice.Its one of the very tasty dish in Tamil nadu,India.It is little spicy dish,but you can adjust spiceness according to your level. This receipe is from my MIL.Try it and i hope u all like it...

INGREDIENTS U NEED:
1.Drumstick/Murungakai-2(cut into medium pieces)
2.Kathrikai/Brinjal-2(cut into medium pieces)
3.Onions-1-(chopped finely)
4.Tomato-1(chopped finely)
5.Garlic-4cloves(crushed)
6.Chilli powder-1tbs
7.Coriander powder-1tbs
8.Turmeric powder-a pinch
9.Salt - as per taste
10.Oil - 2tbs
11.Corriander leaves-To garnish
12.Curry leaves - To garnish
13.Seasoning-1tbs(mustard,urad dhal,cumin)
14.Tamarind extract-1cup

UTENSIL:
Deep bottomed pan

METHOD OF PREPARATION:
  • In a pan add the oil,add all the items from seasoning, when its splutter add onions let it fry untill it is translucent.
  • add the tomatos fry it untill it becomes like a paste
  • Now add drumstick and kathrikai and let it fry for few mins
  • Add salt, chilli powder,corriander powder,turmeric powder and crushed garlic and let it cook for 10mins or fry it untill the oil seperates from it.  
  • Finally add the tamarind extract and some water to it and allow it to boil for 5-7 mnts/until the vegetables cooked completely and garnish with corriander leaves.
GOES WELL WITH:
    Plain rice
