Berry Punch ~ Shanthy

Berry punch is a very refeshing drink ,easy and simple to make and it is good start up drink during kids birthday parties,Get together,Picnic etc.Here is the direction to make.....

INGREDIENTS U NEED:
1.BerkleyJensen Cranberry Rasberry Juice-2Quarts
2.Canada dry Soda-1Quart
3.Ice cubes as needed
4.Rainbow sherbet or Icecream as needed(Optional)

UTENSIL:
Big deep Punch bowl

METHOD OF PREPARATION:
  • In a large punch bowl mix cranberry, rasberry juice and canada dry soda.Then combine together.
  • Now add couple of tray of ice cubes and give it a stir.
  • Just before serving, add scoops of the ice cream or sherbet and serve.

Amarnathleaves Poriyal with Peanuts

Amarnath leaves poriyal is a simple,healthy, low-calorie, low-fat, high protein, nutritional dish that is used often in my kitchen as side dish for sambar rice.Here is how i cook it....

INGREDIENTS U NEED:
1.Amarnath leaves-5cups(Chopped)
2.Onion-1(Sliced) 
3.Red chilli-2(Slit)
4.Garlic-3cloves(Crushed)
5.Fried Peanuts-1/2cup(Coarsly grinded)
6.Seasoning-Mustard,Cumin,Urad dhal
7.Salt as needed
8.Oil

METHOD OF PREPARATION:
  • First wash and chop amarnath leaves and keep it aside.
  • Heat oil in a pan,add mustard seeds,urad dhal,cumin and fry them,When they start to splutter add splited red chillies, crushed garlic ,chopped onion pieces and  Let them fry until light brown color. 
  • Now add chopped amarnath leaves, Mix well and let it cook in the medium flame untill all the water evaporates. 
  • Finally When it's almost done, add salt and coarsly grinded fried peanuts powder and stir well untill it becomes dry.

GOES WELL WITH:
      Sambar and Rasam rice

Bean Soup with Indian Twist

 Bean soup is a very healthy,delicious and spicy soup with indian twist.It is my own version of soup which is very quick and easy to cook.Here is a great tasting bean soup....

INGREDIENTS U NEED:
1.Dry 15 bean soup mix-2cup or Pinto beans
2.Red onion-1(Diced)
3.Canned Plum tomato-1can
4.Zucchini-1(Diced)
5.Celery-1stalk(Diced)
6.Red chilli sauce-3tbs
7.Red chilli flakes-1tbs
8.Pepper powder-1tbs
9.Lime Juice-3tbs
10.Dry oregano-1tbs
11.Salt as needed
12.Extra virgin olive oil

METHOD OF PREPARATION:
  • Soak the beans separately overnight and drain.
  • In a large soup pot, place the beans, the onion, zucchini, tomatoes ,celery and olive oil, and cover by 1-inch with cool water. Cover the pot and bring to a boil. 
  • Now Lower the heat and simmer until the beans are tender about 1 hour to 1 hour and 30 minutes. 
  • At this stage Add the sauce, chilli flakes,oregano,pepper powder,salt and turn the heat to high and mix it altogether well and switch off . 
  • Divide the soup among 4 bowls and top each bowl of minestrone with a lime juice and serve hot.

    Tomato Biryani(Myerecipecorner)

    One more tried recipe....

    INGREDIENTS U NEED:
    1.Basmati rice-2cups
    2.Onion-2(Sliced)
    3.Tomato-3(Chopped)
    4.Mint and corriander leaves-1cup(Chopped)
    5.Gingergarlic paste-1tbs
    6.Chilli powder-3tbs
    7.Turmeric powder-1tbs
    8.Seasoning-Cinnamon,Cloves,Cardamom
    9.Salt as needed
    10.Oil

    METHOD OF PREPARATION:
    • Heat oil in a pressure pan, add the cinnamon, cloves and cardamom. When the aroma rises add the onions and fry till pink in color, now add the ginger and garlic paste and fry till the raw smell leaves.
    • Then add the peas, chopped tomatoes, chilly powder, turmeric powder and salt. Cook till the tomatoes are mashed and oil separates.
    •  Now add the mint and coriander leaves, fry for a minute. Now add the required water for the rice and check the seasoning. Add the washed and drained rice and cook until the rice becomes tender.


      GOES WELL WITH:
           Raita

      Urad dhal Chutney(Samai)

      Tried recipe..... 

      INGREDIENTS U NEED:
      1.Urad dal - 1/4 cup
      2.Red chili - 4 to 5
      3.Garlic - 2 cloves
      4.Tamarind - small gooseberry size
      5.Coconut(grated)  - 4 tspn
      6.Curry leaves - a sprig
      7.Hing - 3 to 4 pinches
      8.Salt - to taste
      9.Oil - 2 tspn

      For Seasoning:
      Mustard seeds and Urad dal - 1/2 tspn
      Onion - 1 or 2 tspn
      Curry leaves - a sprig
        METHOD OF PREPARATION:
        • Heat a tspn of Oil in a pan. Add Urad dal, Red chilies and Garlic, fry till dal turns golden brown.
        • Then add grated Coconut, Tamarind, Hing and Curry leaves. Fry for 1 or 2 minutes and remove from heat.
        • Now grind these fried ingredients with Salt and make a coarse chutney.Add water while grinding.
        • Heat a tspn of Oil in a pan, add Mustard seeds and Urad dal. Once the seeds starts spluttering add Onion and Curry leaves, saute till Onion turns golden brown. Then pour this mix to the chutney.


        GOES WELL WITH:
              Dosa
